For me as a complete beginner in Colorgrading it seems like a loooong way to even set all the trees and Hotkeys up.

That's totally fine, it takes time to find out what works for you. Overtime you find techniques that work for you and then you can find a way to seamlessly implement them into your personal workflow. All I would say is to always consider how adding something to your workflow will work when working on a large project with hundreds of clips.

I'd like to ask: is 8Gb VRAM enough for color grading in DR? I'm going to switch to it from Adobe Premiere and I can't decide which GPU to buy. Thank you in advance for the answer!

I actually just switched to an M1 Pro Mac because my computer (i7, 2080 super, 16gb Ram) was somewhat struggling with some of the more complex timelines. It would do fine if I was just editing regular footage, but as soon as you start grading, adding grain, etc. things would slow down quite a bit. So hopefully that gives you a better idea, but no matter what I would go with an Nvidia GPU since a lot of DaVinci's advanced effects and features are optimized and utilize Nvidia hardware.
