- Here I explain how to make one of Irelands national breads Batch Loaf and I also end up creating a Little competition. The Winner ended up being Geraldine from Baldoyle in Dublin. Well done Ger!
Simple Batch Loaf
1400g of Bread flour
800ml of tepid water
50g of fresh yeast or 17g of dried
3tsp of salt
50g of butter (softened)
Gives 4 loaves
Preheat your oven to 250 degrees C 40 minutes before baking.
If using dried yeast, add it to your liquid for 5 minutes before mixing in order to activate it.
Dissolve the fresh yeast in the water and pour into a mixer with a dough handle attached. Add the flour and butter and knead slowly until well combined. Around 5 minutes. Add the salt and turn the speed up to medium for a further 5 minutes. Then advance to full speed for another 4 minutes.Throw it out onto a floured surface and skim it with a touch of flour on top. Cover in plastic and leave to rise until it doubles in size
Knock the air out of it (go for the ribs haha) and shape to a ball once more. Repeat with a light bit of flour on top and cover again. After split the dough into 4 (550g) chunks and shape round.
Put them in a greased deep square pan. I used a 30x30cm x 10cm deep in the video. Brush the tops with water so they don’t dry out and put the pan in a big plastic bag/sack and trap some air in it so the bag doesn’t touch the tops of the loaves. Tie the bag with something so the air can’t get out. There ya go, your own home prover! Leave to rise until doubled in size at room temp or throw them in the hotpress if your gaff is cold
Bake at 250 for 15 minutes then turn the heat down to 180 and bake for a further hour or so. If you want them darker on top. Start with 20 minutes at 250 then 55min at 180
If you want the bread more compact like in the shops shape to balls after the first rise and prove them in your sack
If you don’t have a mixer or you have dodgy wrists. Combine the dough in a bowl with a spoon. Cover the bowl with plastic. Let it double in size. Knock the air out again in the bowl and repeat twice. This will naturally tighten the gluten strings in the dough without the use for kneading. After, shape like I explained before.
TIP: iThe dough needs to be slightly sticky to the touch. So hold a bit of the flour back at the start and see how it combines. The rises in between will absorb the moisture. So if it starts out too dry it will be quenching by the time you shape them to loaves. Best of luck! Oh and...one more thing...Up The Dubs!

what size pan is that please to bake them in. Great memories of batch loaf from the travelling shop in the 80's at home in Leitrim. Nothing like it with butter and homemade blackcurrant jam :)
