lol this dinged just as I finished shadow sparring, myself. Couple more things people can do: if you don't have context for shadow sparring yet, drill your fundamentals repeatedly, at speed within the sparring time limit- flowing into my second suggestion, have a time limit. The simple concept of round time and recovery between rounds (if doing multiple rounds) adds an extra level of pressure to simply moving, and helps with the prep for actual sparring. Otherwise gr8 stuff as always, mannnn

Can someone with experience in Arnis / Kali / Escrima answer a question? There are so many techniques and counters to the art which takes years to learn but when I watch videos of stick competition or sparring it amounts to basic strikes and blocks. What are the practical self defense benefits to learning all those drills, forms and techniques when one can just practice the basic counters and blocks to be effective in a real life encounter?

Practicing a martial art as a whole is different from practicing for specific applications.
Sports do not represent the entirety of the martial art. It's a game that reflects specific attributes, not all of it.
Learning to defend yourself is a different application from sports application and so that looks different too.
The benefit of learning a martial art in all its aspects (traditional forms/moves, modern applications, sports applications) would be the appreciation of a deeper knowledge of the art.
But you can also just focus on one aspect if you prefer (and your instructor is cool with it).

Just to follow-up: Sometimes instructors teach you drills that aren't meant to be used as they are. They're exercises to work on attributes likes speed/timing/sensitivity/etc. Kind of like doing strength exercises or cardio work.

Wazzup bro. Pugay! I am a beginner coach of arnis in our school. I am an arnis sports player before. But I guess my body is not as it used to be so I'm having a hard time teaching my students now. Can I ask you some training tips and designs which I can start for beginner athletes?

I think it would be best to get formal training from someone with experience in coaching Arnis athletes. :)
