Jakob, the "double-stop" you're referring to on the Bm7 (at around 2:00 in you video) isn't meant to be played as you tried to do. Instead of bending your finger flat, you use the tip of your finger placed both strings. The flesh catches both strings. Ted does this quite often. He probably also uses it on the Am7 chord in this same example as well. (Which you did, but again, use the tip of the finger instead of flattening it.)
I've been using this technique ever since I learned it from Ted in 1984. I couldn't live without it. It allows for quick, clean, and smooth fingerings. I'm actually surprised that you don't employ this technique, since you are so deeply into Ted's playing and music. I would say that it is integral for being able to easily play with the same fluidity as Ted.

FWIW Ted used the tip of his finger for those double stops. I can't do it with my skinny fingers, but a lot of people can get it to work. You may already know this of course.
