I grew up and lived in Hawaii my whole life. We always do this. Also, when you refrigerate rice it becomes resistant starch and doesn’t effect blood sugar as much. We also wash the rice to get the cornstarch off.

Rice reheats great -- just dribble a tiny bit of water on it before you microwave it, and it'll be as soft and fluffy as when it was fresh.

If u want a thicker consistency to the beans u could just break down some of the beans, the starch inside will give u that color and thickness ur looking for, no tomato sauce necessary! ❤❤❤😊😊😊 lot's of love from Brazil 🇧🇷 ❤️

You can also use tomato paste to color/thicken your sauce. It can also add more flavor than tomato sauce. Leftover tomato paste can also be frozen in TB size dollops for future recipes. 😉

Your idea of pre-cooking and freezing ground beef and chicken has been life changing. I have been planning on making extra rice too. Thank you! I unintentionally had some leftover pasta, and froze it and was able to use it with frozen ground beef, the frozen pasta, peas, a small amount BBQ sauce, and topped with extra sharp cheddar cheese yesterday to have for lunch at work. Much to my surprise, I loved it and fixed more for todays work lunch!

    Electric pressure cooker beans:
    3 cups dried beans
    1.5 TBSP salt
    2 TBSP minced garlic
    1 TBSP Cumin (optional)
    7 cups water
Push the bean button to cook for 55 minutes.
I can use the same recipe for chili beans, but I also add 1/3 cup of chili powder.
This makes 3 dinners worth of beans for us. Eat one frreze two flat in quart of sandwich baggie.
I can use the same recipe for black-eyed peas, but omit cumin and add some shredded carrots. A ham hock would be nice with the b.e.p.s or with white beans.

      Instant pot rice...
1 scoop rice (I believe that is 3/4 cup) plus 2 cups of water. Double or triple as needed. Push the rice button which will do 12 minutes. Let it natural pressure release so the water gets completely absorbed. I think it's about 40 minutes from beginning to end.

Here's why red beans is the perfect meal for Dana to be showing us: it was (and still is) traditionally made on Monday. Monday was traditionally Laundry Day! So you let it cook and simmer in the stove all day while you do your laundry by hand, season with whatever scraps you had from your big Sunday dinner, and it's a quick, satisfying meal for a long day of doing laundry by hand.

Hi Dana, love the video! I laughed at the comment at the end about the lady from La. That would be me but I’m certainly not mad! There’s a regional brand of cream style pinto beans here called Blue Runner if you can find them. ( they’re light like you prefer). You have a very nice rice cooker. Did you know you can make jambalaya in there with your same sausage and canned black-eyed peas ?

If you have an Instant pot you can cook dry beans with it and have extra to freeze for later too. Reid, my husband would agree with you that the beans need Tabasco sauce! Also, think about how you can change one meal into another meal with the leftovers. Examples are Chicken and Rice can then be Chicken Pot Pie and Spaghetti sauce can be sloppy joes. My daughters favorite is Macaroni and cheese one meal and the next one add a can of Rotel and it’s like Queso macaroni.

Paprika will also color your liquid redish, and add a little zip.
Also you can pre-cook your beans. I like red kidney beans and it's hard to find any inexpensive canned beans without the sugar added. So I pre-cook mine in the instant pot. I make extra and freeze it in ice trays or very small amounts, which allows it to thaw more quickly when needed spur of the moment. Good for soups, stews, casseroles, stir fry, ethnic dishes, etc.

Just another thought - I’m not a stove top cooker, I’ve started a fire or three by forgetfulness. I slice my sausage lengthwise *and* slice it like Dana does, then spread pieces on a pan under the broiler in the convection oven with a timer to shut it off (again, ADHD brain, I start kitchen fires by forgetting food is cooking).
I like the sausage browned really well.
My favorites are Holmes Smokehouse all beef Polska kielbasa or Sam’s Choice (at Walmart).

As an aged care worker, I am aware of a stove shut off. Needs to hard-wired by electrician. you use your stove controls normally but the shut off is set for 1, 2 hrs, 20 mins, whatever is likely to prevent a fire. I'm unsure if that setting is changeable once set, but you just press the red button again when cooking longer times. Better to forget to turn the stove on again than forget to turn it off. I'm unsure if there is a kind that works with gas stoves.

My kids love chicken rice casserole. I’m sure there are many recipes online. I got it from my mother-in-law. 😁
      CHICKEN & BROCCOLI CASSEROLE
      2 cups cooked chopped chicken
2 cups cooked rice (usually use a little more)
2 cups (1 bag frozen) broccoli, cooked or fresh/thawed
      1/4 cup melted butter
      1 can cream mushroom soup
1/3-1/2 15 oz. jar cheez whiz (velveeta or shredded cheese if preferred)
      1/2 to 1 can water
Season however you think. (Salt, pepper, paprika, garlic, etc)
I use big pot or skillet, and if my chicken isn’t cooked, I cook it in the butter.
Add soup and cheese (and butter if not used yet) warm over med to low heat.
Add broccoli and rice. Add water to loosen, not soupy.
Put in greased/sprayed 9x13 baking pan.
Add crumbs to top if desired. I mix crushed crackers with a little butter.
(My mother-in-law adds crushed potato chips after baking 🤷‍♀️)
Bake 45-55 minutes in center of oven until golden on top and bubbly around edges and middle. Center should read 165.
Put foil over top if browning too fast.

I have a tasty, quick, and super-easy recipe. But whether your kids will like it depends on how they are about food in a sauce and/or different foods cooked together. Some of my grandkids love it, others only tolerate it because they're young enough to prefer separate food. ;-)
      Chicken in Wine Sauce
4 chicken breasts (boneless, skinless), cubed or cut in strips
3 medium carrots, thinly sliced (or baby carrots - although those take longer to cook)
      pepper to taste
      salt to taste
1/4 C white wine (I've used whatever wine I have around. You can use cooking wine - just eliminate the listed salt)
1 can cream of chicken soup - the regular or the low fat both work
Brown chicken (I quit browning it out of laziness and it works fine, so either way is fine.) Add remaining ingredients. Cover and simmer 20 minutes or until tender. The carrots are the last to be done so I simmer until carrots are tender.
      Serve over rice or noodles.
      Good with cornbread.
Instructions say it can be frozen although I've never done that.
One of my daughters adds cubed potatoes when the carrots are added and omits the rice or noodles.

I usually cook twice as much rice as I need and freeze half. I flatten it out in a freezer bag, and when I need it, just thaw it some. On the stove, add chicken broth or brown gravy and make a side dish. With the chicken broth one, I'll throw in some peas and carrots sometimes.

I think it’s concern about food poisoning. If rice is warm for a long time, bacteria grow on it and it can be very nasty. I cool the rice quickly after cooking it the first time, at room temperature for 20-30 minutes, then put it in the fridge uncovered until it’s really cold, then cover it and keep it in the fridge. (The reason for chilling it uncovered first is to avoid longer heat retention and condensation onto the rice.). Then I keep it chilled or frozen and eat it soon if it’s just chilled, withIn a day or two. I’m not a food scientist though, so this is just what works for me. I had food poisoning once from white rice left out too long on a warm day, and never want to experience that again!
