    Here in Serbia, we call them Cevapi. Same ingredients minus the casing. We just roll the meat into sausages like those and grill them. Put them in a bun like that, very good :)

    My mother and I make these in batches and store them in the freezer. Although, since we're Khmer, we add lemongrass amongst other things.

      we in Thailand add other things too, herbs and paste. I think this is a simplified version of the sausage. wonder what yours taste like

    No you do NOT freeze unused sausage casings. Store them in salt in the fridge.

    Sai Krok means sausage and Isan is the province in Thailand which these were originally made.

      Isan is not a province. It is the north east region of Thailand which incorporates many provinces within it.

    It's actually called Sigh Grock E-saan(ไส้กรอกอีสาน), its a "G" sound not "K". Also, in Thailand they don't put nearly as much meat. It's a lot of rice with little specks of fermented pork meat. Those look like little turds on a piece of bread with some fancy garnish, just saying.

      Actually the letter "ก" (gor gai) is better described as mix between the G and K sounds and everyone who makes ไส้กรอกอีสาน in Thailand makes it a little different just like som tum, no two are exactly the same. Just saying.

      It only has the "K" sound when it come at the end of a word. If you take the words chicken(ไก่) and egg (ไข่) you can notice the very subtle difference. Thais wouldn't waste that much meat in 1 sausage, they sell them to make money, so more filler less meat equals more potential sausage that can be made and sold, increasing their profits. I get what your saying tho.

      The word for egg is pronounced with a hard K. The word for chicken is pronounced with a windless or stunted G/K sound. It is not a G and definitely not a hard G sound as you claimed.

      The K comes from the actual romanization of Thai letters yes while it's pronounced with a G it's correct. It's standardized.

    - sour grilled sausage; so badass. I'd throw that shit in a jungle curry with huge prawns and eat it like some sort of fat Thai gumbo-fusion over Jasmine rice.

    This is Bkk style sai krok isan not original. The original old time sai krok isan is not fermented and the size is larger about 10 cm per piece

      +Tarou Yuu Ermmm..."Isan" in sai krok isan is refer to isan region in Thailand. By the way, It very common that isan food and lao food look the same because we are very close in many way but lao food is more milder and classy side(i also love it) Isan is about "in your face" kind of taste (you know what i mean) and yes sai krok isan should eat with sticky because it's taste was too strong for jasmin rice, in Thailand we serve it with sticky rice too. Another way to eat sai krok isan in Thailand is the same as he serve in the video(with ginger slice, chilli and vegetable) but it should be only mild fermented. you can find it serve like this as street food around Thailand.

    The Sai Krok is good and the ingredients in the sandwich is decent. But omg he is lazy. Why doesn't he chop up the spring onion at least be4 putting it in the sandwich? If he is doing it because of the visual effect, then the producer should be fired.

      Hardly, these are served with fresh young ginger slices, small Thai green chillies and fresh white cabbage leaves. The sausages are charry on the outside, the pork inside sticky, and richly flavoured by the fermentation process. A truly great, yet simple Isan Thai dish.
