for anyone following the written pattern and is confused at the ear part, here is the pattern I managed to derive from the video!
DC, HDC 2, SC, 2 SL ST, skip the next stitch, SC, SC, HDC 2, DC

Edit: I forgot to add, it took me 3 days, and probably like 25-30 hours to complete 😂 it was so worth it!

Single crochet, single crochet then increase (two sc in one stitch) do it 7 times. Hope that helps
