I tried Rainbow Plant Life's brownies and was really excited for the recipe to finally deliver a good vegan brownie, as I’ve been struggling with oily/split batter multiple times in the past. I multiplied all the measuments x2,5 (except the salt) for a bigger pan and weighed out all the ingredients. The baking process went really well, the batter finally didn’t split for once (!) and the shiny crackly top was on point, even though my batter seemed quite a lot thicker than in the video. Unfortunately after cooling and slicing it turned out that the brownies were once again really oily and there was a lot of grease at the bottom of the pan. I used Lindt 70% dark chocolate and Naturli Vegan Block as butter and melted them over a double boiler, not sure what I could have done wrong… Any advice on what keeps going wrong? I’m slowly becoming desperate :( After some cooling in the fridge the grease solidifies and becomes a white layer at the bottom of the brownies, so I'm suspecting it could be separated cocoa butter... After all it still tasted okay, but I’m sure the recipe could turn out much better. Greetings from Germany and keep it up with these great comparisons :)

I'm thinking the chocolate or melting process might be the problem, I've had a similar problem with a chocolate tarte back in my non-vegan days, but I don't know what I should change in order to prevent this, so I thought I might ask
@@jg6125 try seeing if it's your oven, it might split if it's too hot, ovens can be funky and sometimes be hotter than the displayed temp, so lower the temp by a few degrees and cook for longer

Did you use any cocoa powder? It's more absorbent since it has less fat and more starch than chocolate bars, making the brownies less oily.
