I'm in Florida and LOVE soups, stews, chili, and pastas in our winters.. since no snow we still grill too which is nice.. it will be in low 30s this weekend so thats cold for us floridians lol

To get the Olive garden flavor we love I add some tomato juice. It has a different flavor altogether that works in Minestrone soup. I also use a piece of rind from some parmesan cheese. Thanks for the chick pea suggestion yes. A little protein never hurts. I serve it with a simple salad and butter and garlic coated french bread. We have some cold days in the south too. It is 18 degrees here in Virginia and should get some snow over the next two days.

Minestrone simply is Italian for a vegetable soup with pasta. I’ve never had it with mushrooms or peppers in it. Traditionally it has onion, garlic, beans (including green beans) any kind of squash, carrots, celery, tomatoes, potatoes and I’ve also added a little cabbage when I have it. I prefer a beef stock or broth added for a rich flavor along with the crushed tomatoes…and of course some Romano or Parmesan cheese. Any small pasta will do, but ditalini works best. 😊

Here in Missouri we were 7° yesterday morning while Anchorage Alaska was 25° so Amy I don't think it's very warm here. But we have soups and Chilli just whatever warms us up. This minestrone soup looks wonderful. It's been a few years since I have made it. I need to again since it's been so cold here. I will say this year has been a little colder than usual.
I like to add zucchini and string beans to mine when it's fresh if I add pasta I like to add either ditalini or orzo.. oh when you said Kelly reminds me when I made my last pot of minestrone soup a couple weeks ago I did add some kale and because I had it left over from when I got a hello fresh box in the mail and my daughter didn't use the kale on hers because she didn't like it.. I also don't put mushrooms in my because my daughter dislikes mushrooms also if I do use a little tomato paste I like to cook it in the pan a little bit and then put it into the soup

I like minestrone soup 🍲 from Campbell's company but never made homemade soup. Oklahoma we eat during our winter months at least I do eat soup and sandwich because I am really from New Jersey and I like open faced turkey Breast or roast beef with mashed potatoes and gravy also a vegetable too.

Amy, you should look up some Polish and Hungarian dishes. There are so many recipes that I’m sure you would enjoy. People of the old countries were oftentimes poor and used every single part of an animal to cook with. They also had gardens to grow most of their food. Hungarians had many different types of potatoes that they grew and used. They also would pickle tons of items from the garden and eggs.

I was raised by a single mother in Winter times and all year round growing up I remember her working all the time she would come home with very delicious exotic dishes from being a waitress at some of the finest restaurants where she worked. The last job she had was at the Calabasas Golf and country club CA. The cook there his name was Willie he would always make special lunches dinners and brunches for my mom to share with me her son when she got off work. When my mom retired from a knee injury. She had more time to enjoy the kitchen and cooking without having to be in a rush winter times were spent cooking turkeys on the holidays hams. Those are my favorites these days in winter time. My mom passed in 2016 from lung cancer. I miss her very much. I enjoy watching your shows you resemble my girlfriend I had for over 17 years. She was in a wheelchair all her life that didn't stop her from getting training and getting a job at Kaiser laboratories in North Hollywood CA she worked there over 25 years she had her own car with the special wheelchair lift for her manual wheelchair she took care of her mother and father when they got elderly and ill and finally passed. These days she spends her time with a 24-hour caregiver now that her arthritis stops her from using her hands very well she doesn't drive car anymore and she retired quite a few years ago now. I wish she would call me and say hello every now and then. She knows her home is with me. She chooses to live with a caregiver and she cut off our friendship. I guess it's because of her depression she enjoyed her independence she had in our relationship now that she can't hold a spoon or a fork or a knife to feed herself she feels ashamed and doesn't want me to be around to see that. She knows I love her even more with her condition worsening. It's a rough time for me dealing with that as you could imagine sincerely Amy 👍🌹 Joey ⚓

Minestrone is just vege soup with pasta. I use rice macaroni pasta to be gluten free. I put nutritional yeast on top instead of parmesan.
