How To Make Butter Chicken with Rice | Amy Roloff's Little Kitchen

  • I wasn’t sure what to name this recipe. Butter is definitely in the recipe but so are a few other really warm savory spices. I haven’t really cooked what is known more as an Indian dish but I thought it’s about time I did. This is another easy dish to make. It has a little layering of flavors with a hint of Indian spices. I tread lightly here because I haven’t been a fan of curry and other spices like this and thought I would start getting back into it with this dish. You begin by marinating the chicken, mingling spices with onion and butter to create the sauce. You add coconut milk and a little chicken broth if needed. If you haven’t tried Indian dishes I think you’ll like this one. I know I really like it.
    Enjoy :)

    Hi 👋
A Friendly Tip when Marinating Poultry,, Meats, Fish etc... Mix the Spices, Ginger and Garlic into the Yogurt first, then add the Chicken. It makes things easier to mix and evenly coat!😊

Mixing all wet ingredients the day before you marinate allows allows all the seasongings to bloom together. Then I add my protein and allow it to marinade all together. The flavors to richly bloom together! Pure heavenly tender delights!

For those looking to make this vegetarian like Amy said- in India a lot of the population is vegetarian and they substitute some meat/chicken dishes with Paneer which is like a cottage cheese type ingredient. You should be able to get it from a normal supermarket or Indian store. You can use the same ingredients as the sauce as you would for the chicken - maybe a bit less garam masala. Another vegetarian option is cauliflower - you can also fry it before you add it to the sauce. Hope that helps for any vegetarians :)

Tika Masala is the national dish of Englund. I fell in love with it a couple years ago. I heat the spices in the oil with sliced onion and peppers, then add the chicken. Yum. Throw leftover sauce and rice in the freezer and use it as a side dish another day.

Watching you Amy is so entertaining! It is fun to see you maneuver around your prep and cook space. You've got all the utensils ready to make it easy for every step of the recipe. What I get amused by is when you "eyeball" ingredients and spices. You'll say a half teaspoon, which I anticipate to be a tiny amount, but you dump much more in the bowl. Same with the cup of greek yogurt. It looked to me like a whole bunch more! I laugh because it probably turns out better than if you measured precisely as the written directions say. Wish I could be so relaxed and comfortable with cooking like you are. All your videos make it seem like us viewers are best friends with you and sharing time together with you. So fun!!! I'm learning many new kitchen techniques by following you.

I love you Amy! Any chance you could do condensed versions of these kids of videos? 40 minutes is a lot for me. Would love if you did a quick 5-8 minute “2 cups of this…..let that simmer” ect version. Almost as quick as reading a recipe. 💜

Bless her heart, but she is so un organized and needs to get with a plan , that way the vids would be shorter. She is all over the map and maybe this that the other. WOW . I lose interest real fast, sorry.

*INDIAN DISHES ARE EXCELLENT KEEP TRYING. EVEN A BASIC CURRY CHICKEN CAN BE CHALLENGING USING PASTES, ECT. BUT IF YOU HAVE AN INDIAN OR PAKESTAN GROCARY STORE, YOU CAN BUY ALL THE SPICES PREMIXED IN A PACKAGE, JUST LIKE YOU WOULD BUY SOMETHING FROM A MCKORMICKS MIXED SPICE PACKAGE, BUT MORE INTENSE, LESS POWDERED. TRY IT!*
