Gaurang at HiraKashi has been feeding us Undhiyu for the last 30 years and I for one am a super fan! We used to order in bulk when we were doing very large catering jobs and it never ever failed us! Soam is great but too little oil somehow takes something away from an Undhiyu. STB is the king of thalis, their Undhiyu is lovely with the whole thali experience but not as 'wow' as HiraKashi. For me it will always be Hiralal Kashidas for Undhiyu. If you are there in winter dont miss the 'lilva na ghugra' crescent shaped fried dough packets of gorgeous green pigeon peas in a sweet-sour-spicy flavour.
Kunalji....all Undhiyu you had were Green Undhiyu. It's mainly popular in Surat and South Gujarat. There is a Red gravy Undhiyu in Kathiyawad (Saurashtra) side of Gujarat which is quite different from Surti version. You should give it a try. Also Green Garlic is a star ingredient which is available 365 days in South Gujarat especially in Surat.
There is nothihg like red undhiyu....undhiyu must be green and made of surati papdi and green garlic...which is mostly available at surat....red undhiyu is like rasgulla made from bread..so better called it with different name...may be it tastes good...but dont call it undhiyu....undhiyu is green and it is called surati undhiyu only

There are 2 types of undhiyu, one is lilva undhiyu which is predominantly the one made in Surat, and there’s another one made in Kathiyawad which is red and much spicier than the green garlic surti undhiyu. To say that there’s only one is very misleading and false. My family is Kathi from Junagadh and a lot of our cuisines (kathiyawadi/saurashtra) are quite a bit different from the other parts of Gujarat due to the much harsher and colder climatic conditions. Maybe you’re not aware; but most of the gujrati folks are quite aware of the two variations of the undhiyu traditionally available in these parts of Gujarat.

Real Unhiyu has no cooking involved in it. Farmers used to go to their farms for night duty after having early supper at home in the winter, but around midnight they would feel hungry. So they would pluck few fresh vegetables grown on the periphery of their farm. Would put them in an earthen pot with water, close the lead and put fire around it. Fire that was already there to keep them warm. After a while, they would turn the pot over its head (Ulatana matlab undhiyu) to bring out the boiled veggies. Since farms don't have proper kitchen in most of the Gujarat, they would keep basic masala like salt, red chilly powder, sesame oil (now groundnut oil) at hand. Basically they would add these salt, red chilly powder and pour kachcha tel into the veggies and have it as it is. No frying/ deep frying/ tadaka etc. These days what you get in the cities is not Undhiyu, it is mixveg of a different kind. But I love your show, Kunal.
Correction Kunalbhai... Purple Yam (Kand) and Sweet Potatos are 2 different vegetables... Purple Yam is like Suran but purple in color inside and has sweetness where as sweet potato in guju ratadu and is like potato but sweet again.
Undiyo our all time favourite and always make it a point to buy or make at home in winter well I have had the undiyo from Soam its awesome...and when you are describing the food my mouth is watering 😂
Last year i had it here jn USA.. but terrible..nothing like undhio.. tray was labelled as Undhio so we came to know..special caterers came from another state..quite disappointment. But few home cooks here make great undhio..minimum 15$ per lbs.😊

dont know if you have heard of a place called Kalpana's club. as you walk from Bhagat tarachand towards Bhuleshwar on your left, there is this tiny lane with a peepal tree. enter that lane an walk for about 2-3 mins and you enter a very very old but very sturdy building and this place is I guess on the 2nd floor. that lane is so small you blink and you miss one step forward and you will miss the lane. Try their Undhiyu once. I promise you will love it. They have the unlimited thali system for lunch and dinner. menu changes daily. Right now im sure they will have Undhiyu almost every day. its a favourite place for people who work in Jhaveri bazaar, kalbadevi area. their thali is just around 400 odd including sweets. but their Undhiyu is really good. less oil and lot of greens similar to the Undhiyu at Soam. Ive never tried at Soam but can vouch for Kalpana's club. Inspite of being in an old building, the kitchen and eating space is really clean. Personally I like the less oil green looking Undhiyu which is how I make it even at home. lots of methi, dhania and green garlic mixed with fresh grated coconut, ground peanuts and sesame seeds, ginger chili paste and lots of lemon juice. I shallow fry all the tubers (baby potatoes, kand, sweet potatoes and raw banana) in one big kadhai and then start adding layers of the masala, green tuvar, green chana, surti papdi and green peas, then shallow fried small green eggplant, then again the masala cover and let it cook for 20 mins on a very low flame. lastly I add the fried muthiyas and another layer of the masala. cover and cook for another 15 mins. it turns out so good. ends up to be almost 3 kg of Undhiyu but except for the deep fried muthiyas takes hardly 100 ml of oil. and one more thing about Undhiyo is it tastes better the next day when all the vegetables has soaked up the flavors of the masala.

Muthiya is a recipe made with methi leaves and besan or whole wheat flour or sometimes a combination of both flours. for Undhiyo it is made with besan as it needs to be fried. there is also a steamed version of Muthiya where the flours are dry roasted for a few mins then methi leaves, ginger chili paste, haldi, dhania powder, red chili powder Hing salt and a little sugar and lemon juice is added. also a little oil is added than kneaded into a soft dough like consistency. then its held in a fist to give it a shape of the fist - hence the name muthiya - held in a mutthi. these small portions are then steamed for about 20 mins. once cooled these are finely chopped and tossed in a tadka with jeera, mustard seeds, curry leaves and lots of sesame seeds. its an amazing recipe for breakfast, with tea, even for lunch or dinner. very delicious too.
Kalabadevi in Mumbai, just type thakkar bhojnalaya in Google, and other one is called soam restaurant it's opposite to babulnath temple in south Mumbai.
Problem with Gujarati restaurants in any part of india, they make subji, daal with sugar and make it sweet..... So, people from other states think we eat sweet food only.... This is a completely wrong perception... Kathiawad region has sweet subjis along with lots of oil ...South & central gujarat don't use sugar in subji ... So, Real undhiyu or gujju khana will be served at gujjus home only ....
Any Mumbai people can't make Perfect Surti Undhiyu . For that you have to come Surat Only . In marriage season, Maharaj ( from Lunavada , near Godhra ) is preparing 100% perfact Undhiyu .

Sweet potatoes are called Sakkariya in gujarati whereas purple yam is one type of kand and called as Ratalu in gujarati.
