I love almond cake. I made some slight changes & doubled the portions to have a bigger cake for the whole family: No sugar, was replaced by 1/2 cup honey. Added dried cranberries, 1 tsp of baking soda. If you want your cake to rise, make sure your white eggs are worked out like snow before folding them gently in the batter, don't grease the walls of your pan & put parchment paper at the bottom of the pan. That way, you'll have a beautiful & fluffy cake.

I request you to please mention quantity in grams, as the standard eggs here have to be separated and are small in volume so it becomes extremely difficult to whip egg whites. I have type 1 diabetes so I need it in grams. Please, please, please!!

LOW carb?????? Did you watch the video? Did you see that quarter cup of sugar? It's gluten-free, (which is what I think the youtuber was aiming for) but it's not lowcarb. Sugar is one of the top carbohydrates in the entire food spectrum.
I just made with substituting allulose for the sugar. Turned out a bit too sweet for my taste. The cake was spongy and delicious otherwise. May try 1/8 cup allulose next time, instead of the full 1/4 cup sweetener that the recipe calls for.
Trish Truitt there must be a conversion as sweeteners are much more sweeter , 250g of real sugar is the equivalent to 25g of sweetener,you divide it by 10
