    I love almond cake. I made some slight changes & doubled the portions to have a bigger cake for the whole family: No sugar, was replaced by 1/2 cup honey. Added dried cranberries, 1 tsp of baking soda. If you want your cake to rise, make sure your white eggs are worked out like snow before folding them gently in the batter, don't grease the walls of your pan & put parchment paper at the bottom of the pan. That way, you'll have a beautiful & fluffy cake.

      What size pan did you use? I am very glad to see that you used honey, and it worked. I am assuming that the 1/2 cup applies to a double recipe?

    Thank you so much!! Me and my daughter made it today and we love it!! We added 1 teaspoon of baking powder, a pinch of salt and lemon zest. It’s delicious!!

    I added Lakanto monkfruit sweetner, half a tsp of baking powder, 2 tablespoons of cream and 1 tablespoon of sour cream and a tsp vanilla essence. It was my keto treat and it was awesome. Thank you for such an easy recipe!

      I was thinking about doing this, glad to hear it turned out well. I figured I'd use either swerve or stevia. How much stevia did you use? I plan to use almond extract instead of vanilla. I think it'd make a nice afternoon treat with a cup of tea, I can't wait to try it!

    I tried this by adding a teaspoon of baking powder and a little bit of shredded coconut. It turned out really soft and flavour full. Also I reduced the amount of sugar to half and instead added a little bit of maple syrup. I would definitely do this again. Only down side is that, the cake size is pretty small. But it would last as my tea time snack for a couple of days.

    I used Lankanto monkfruit sweetener, 1:1, and it was perfect. I used sliced strawberries on top, with coconut milk whip topping. Yum.

    3/4 cup Almond flour
    1/4 cup sugar
    1 tbsp vanilla essence or Almond Essence
    2 tbsp milk (If batter is its too thick )
    2 tbsp sliced Almond
    2 eggs

      Rx Moreno Add lemon zest and a squeeze of lemon juice. Should masks the egg taste. You can also increase the vanilla flavoring.

    I modify the recipe with 1/4 cup of maple syrup (same measurement) and i find it too sweet and too moist. I think 1/8 cup would be better. I also add a tiny pinch of baking soda to make it rise better since it's more liquidy

    Also, how long do egg whites take to whip on a 300 W hand mixer? Please respond. 😭😭😭😭 I used a handheld sieve to separate egg whites and egg yolk? Will thay be an issue? I request you to please mention quantity in grams, as the standard eggs here have to be separated and are small in volume so it becomes extremely difficult to whip egg whites. I have type 1 diabetes so I need it in grams. Please, please, please!!

      sorry for the late reply.. egg white has to be whipped till they form soft peaks and dont over mix the batter .. i have used large eggs which weigh around 60 gm each

      LOW carb?????? Did you watch the video? Did you see that quarter cup of sugar? It's gluten-free, (which is what I think the youtuber was aiming for) but it's not lowcarb. Sugar is one of the top carbohydrates in the entire food spectrum.

      I just made with substituting allulose for the sugar. Turned out a bit too sweet for my taste. The cake was spongy and delicious otherwise. May try 1/8 cup allulose next time, instead of the full 1/4 cup sweetener that the recipe calls for.

    If I wanted to use "Swerve" substitute sweetener how much would I use instead of sugar?

      Trish Truitt there must be a conversion as sweeteners are much more sweeter , 250g of real sugar is the equivalent to 25g of sweetener,you divide it by 10
