I learned the secret of italian cooking by watching these videos. Less amount of ingredients, but high quality grade ingredients. That is the key to italian cooking.
You know, Vincenzo, I've had, "Cheese Wheel Alfredo." They made it with just the pasta water and the hot pasta, in the hollowed out rind of the Parmaggiano Regiano. Nothing else. I don't even remember if they used any butter. But it didn't matter - it was the best Alfredo I've ever had in my life! No heavy cream, but still tasted like cream. I have no clue what Nick was doing. And with a last name like Di Giovanni? "He make his ancestors cry," as Uncle Roger would say!

If the pasta portion had been smaller, he'd have a smaller congealed mass of broken cheese sauce. No hot pasta or hot pasta water, just a mediocre heavy cream mornay with garlic. That isn't going to save this mess, just make it look a bit less disappointing, like that mountain of shredded parmigianno he topped it with. If there's one good thing about Nick's technique, it's that he knows that cheese is the best product to use when hiding your shame.

You are right. It will get mouldy if not use. The wheel its perfect for parties or for a restaurant who will use it everyday. It is not recommended to get a cheese wheel for everyday use

Long af pasta is historical. Lady and the Tramp (1955) where the two dogs eat the same noodle from 1 plate and end up kissing, is emblematic of this long pasta thing -- maybe shorter pasta is a modern trend since it's easier to package! :D Edit: Rather than chives, maybe some ripped up basil would be better. I like chives, but basil adds the same green, with a fresher less onion/garlicy addition especially since the sauce already included lots of pressed garlic.

It depends on the machine, but if you look down at the wheels you can see when they are closer together as you change the setting.

I don’t hate him, criticism is not hate. I just don’t think it is right to treat high quality materials and products that way. A mouse is disgusting. They sleep and walk through their own excrement. How do I know? I dated a girl who owned rats and Guinea pigs. Same things basically. That’s just how rodents are. He’s also not just some guy on the internet. He’s a professional chef. He is going to be held to a higher standard of conduct concerning food preparation and technique. Putting a rodent that can urinate or crap at almost any time, anywhere, on your food is not what people want from professional chefs. If he was going to have to cut it off, why not just cut off a piece for the mouse to eat at the start? It’s still wasting food, but it would have at least been sanitary.
