Holy smokes! I need a flow chart to figure out which chili is which and all the different names they become depending on their ripeness. As usual, Rachel did an excellent job explaining them all.
Excuse me you do not need a chart. You just buy them, one by one, and cook them, eat them and then you will have to remember that kind, because by then you already had it in your food.

I am "early" retired and have plenty of time to experiment/play/learn about other Mexican dishes...and Rachel is "my girl"...now. She is "the next best" source of recipes. Since this video is at least a year old I am not sure you will ever see this post. However, I had to say thank you, Rachel for sharing your knowledge about chilies with me. I live in South Carolina now but I am originally from central Ohio. Since the 90’s I have been in love with Mexican cuisine and love to make recipes that are authentic and original to Mexico. Most Americans think that TexMex is real “Mexican” cuisine but I know that this isn’t true. I am so glad to have found this channel and love the way you make a dish seem so simple and easy to follow. Love the videos and can’t wait to see what else you create for your viewers. God bless.

Glad you show such love for the Hatch chile...it is upsetting that here in LA we can only get it fresh in August and it is a zoo to wait in line at certain stores to obtain pounds of Hatch ....oh well...it's like Christmas...you wait for it with such joy
I used to go to Carmen restaurant, it has been closed for a while now, and get tostadas that were so delicious! They had shredded beef that was so tender and juicy, and top with dressed lettuce and avocado! I seem to remember refried beans on a crispy corn tortilla. So yummy 😋

Some of them are familiar from some of the recipes you have made for us. I can tell you this, it will take a while for me to experiment with them on recipes of my own.
I am expanding my very limited Mexican cuisine dishes and growing my own chilis this year. When I was picking out the seeds to grow my chiles I discovered the different names but did not dwell on it too much for lack of time. Thank you, my friend, for making this video, I so appreciate the lesson!
