It was good but I would love to know which chiles are best used for certain dishes or salsas. It would be helpful to know the alternative names for them too. Like cascavel is also called guajillo.

Okay so, I tried to make salsa yesterday using the dried chiles I got for the birria (my husband went a little crazy and bought way too many). I didn’t know what the heck I was doing, adding all sorts of stuff together. I’m glad you made some salsa today. Now I have some direction. I’ll try again tomorrow.

My mom uses a ton of different Chile’s so I have some knowledge in their uses but I’d like to learn more. I am currently growing 10 different Chiles plants, some which we don’t cook with at the moment, but that I’m excited to incorporate into my cooking.

My husband thinks it’s funny that I’ve learned to make a lot of Mexican dishes… I make my own enchilada sauce from scratch, my own Chile Verde that my husband first smokes in his smoker, and now my husband is obsessed with making Molcajete for friends !! Catalina Martinez I learned how to cook from my great abuela and she always kept the peel “cáscaras” because she said, helps the onions stay together in the broth and you save a little bit of time. You can remove the peel and still achieve the same flavors.
