Prepare a diet cake with oatmeal, berries and nuts. It's so delicious and flavorful!
Ingredients:
1 cup or 130 g oatmeal.
1 cup of hot water.
Mix well.
Leave to rest for 10 minutes for the oatmeal to swell.
After 10 minutes.
2 eggs.
1 pack or 120 g natural yoghurt.
Mix well.
3 tablespoons erythritol sweetener
3 tbsp melted butter.
You can use coconut or olive oil.
1 cup walnuts.
Chop with a knife.
a pinch of salt.
1 tbsp baking powder.
3 tablespoons coconut or almond flour
1 tsp vanilla essence.
Mix well.
1 glass of berries.
I have blueberries.
Mix gently.
Grease a casserole dish with butter or vegetable oil.
Bake in a preheated oven at 180°C for 40-45 minutes.
That's all.
Such a flavorful and delicious cake.

Yes, I baked this cake this afternoon and it's moist. No water added because the yogurt softened the oatmeal. I will leave out the fresh blueberries next time because my cake is too moist. However, I can use dried blueberries, I think. I baked this cake at 350-degree Fahrenheit. No sugar. I used 3 -Tablespoon honey. I baked this cake for one hour. I hope my comment maybe of useful for those who love this healthy cake. Thank you for reading.

I'll definitely add cinnamon. GT also said it wasn't sweet enough even though they don't have a sweet tooth (sounds like me!) So, I may add a swirl of sugar free jam.
Try adding dates as a sweet substitute. Good to build up iron and adds fiber too
I have some freeze dried raspberries. Do you think that would work instead of the blueberries?
Honey is no healthier than sugar - use unsweetened apple sauce instead.

I baked this cake today as a get-well friendship cake - we both enjoyed and it was moist and scrumptiously delicious. I substituted w/ 3 tbsp honey and chopped dried apricots instead of blueberries - the yogurt gave plenty of moisture. Thanks for making this and for the additional comments.

I made this cake and it's very good. I added raisins instead of fresh berries, since it's not a season for fresh berries, and I don't like "plastic" taste of strawberries from the stores. I baked at 356F (which is exact equivalent of 180C) for 50 minutes, and it came out perfect.

It's interesting to read your comment on "plastic taste of strawberries", which I'm not really aware of. May be because I don't usually buy them as I do feel that they are not tasty. However, I sometimes could smell the plastic on eating coriander, which I bought in the pot from the supermarket, or I grew in the small plastic container in my kitchen. I wonder if it was to do with the compost used or plastic container. Very interesting!

I made this yesterday. I used quick oats, and 130 grams came out to 1 1/2 cups, not one. I substituted canola oil for melted butter. I baked it for 50 min in a glass loaf pan at 325 degrees F. I wasn't impressed with the taste. Today I tried slicing off a thick slice, around 2-3 inches, put it in a bowl, poured on just enough sugar-free hazelnut coffee creamer to soak in, and microwaved it for 15 seconds. It was "sehr lecker.". If you don't like it right out of the pan, try my way of serving it before you give up on the recipe. I think it would also be good with a diced apple and some cinnamon in place of berries, and maybe substituting applesauce for the oil.

@@johnnyg2501 it doesn’t matter so much that the blood sugar gets raised, of course it does. It depends on how much and even more importantly how fast. Glycemic index and all that.
Honey is the same as sugar for diabetic, you could however use erythrotol a natural sweetener!
As long as you have this once a day proportional to your other carbs if your diabetic you can have a small piece (not a 5x5 piece) instead of bread with protein/veggies. I feed a diabetic husband, he would take a 5x5 out! 😀Just keep it small under a quarter of that.

Healthy and delicious, it is yummy. I do the same with my pulp from juicing carrots, celery spinach and apples, etc. Cook it in the oven, and use it for salads or sandwiches or munch as a snack.

Great recipe, willnow be a staple for me. Subbed raisins for blueberries, used oil and honey. Baked in a shallow dish for 45 mins exactly as instructed and it came out light and moist.

There are 12 different ingredients: 1c oatmeal/ 1c hot water to soak oatmeal in/ 2 eggs/ 120 grams plain yogurt/ mix well. I’m saving this one.
I made this yesterday. Didnt measure the amount of oatmeal exactly and used a half cup of water. I preferred to look it a little dryer. For the sweetness i used 2 tablespoons of honey and i used coconut floor. Really good tasty recipe, thanx.
