Step 2: Prepare the chicken fritters while the potatoes are baking Cut chicken fillets into small pieces or shred into mince if you want a more tender texture. In a bowl, whisk eggs with salt and pepper. Finely chop the parsley and add to the egg mixture. In another bowl, mix the mayonnaise, grated cheese and flour until thick. Combine the chicken with the egg mixture and then add the cheese-mayonnaise mixture. Mix everything well. Heat a skillet with vegetable oil over medium heat. Form small fritters from the chicken mixture and place on the heated skillet. Fry for 3-5 minutes on each side until golden and fully cooked.Tip: Don't make the fritters too thick so that they fry faster and stay juicy on the inside. Step 3: Serving While the potatoes are finishing baking in the oven, you will already have time to prepare the chicken fritters. Place the cooked fritters and baked potatoes on plates. Top with fresh vegetables, such as sliced tomato or salad greens, if desired.
