@@re-de it will be dry within minutes as the phyllo sheets are super thin, I used almost half a bottle of olive oil to keep it moist. You have to bake it immediately, just set a timmer
OMG! We bought a Greek spiral cheese pie frozen at Trader Joes' and loved it so much I Googled the recipe and found your site. After a bit of searching (we live in Texas and Texas isn't known for it's the love of anything but beef) I found all the ingredients except the Greek Olive Oil . Dang. I made the pie and it was DELICIOUS! Next time we will invite our world cuisine loving friends and I shall prepare this with ease and serve it with panache! Thanks to you, Akis.!!!

Exactly what I was thinking! You could vary with this idea so much! Make it sweet like a baklava or switch it up totally like pizza style or quiche like!

Greeks do NOT use yellow cheeses for pies! We use white goat cheese... Antything from feta to myzithra will do. And we always add peppermint to the mix here in Crete.

Akis Petretzikis Kitchen i made this the dat before with kassiri which is available in the middle east. I wish i knew the names of the other ones maybe they’re also available. But this was delicious 😍😍😍😍 kassiri is very fatty, i wish i reduced the butter to 100g because 150 was a lot of butter!

When I went to Greece this was a breathtaking dish thank you for this I will definitely make it.
For those not in Greece, a nice mix of cheeses is Gruyere, Manchego, Feta

You can use any type of phyllo in the same amount. Not puff pastry but phyllo.
