A simple and delicious Greek pie made with crisp, buttery phyllo and filled with creamy feta and ricotta cheese. I love to serve this as an appetizer along with some olives at my dinner parties and especially on Thanksgiving. I usually make two because it goes it gets gobbled up fast! The pie can be assembled 2 weeks ahead of time and stored in the freezer. It’s beautiful to look at, delicious, and simple to prepare. What could be better?

I made some today with feta and gruyere. They use gruyere or kasseri sometimes in Greece too but feta is the most common cheese. I could not find good phyllo here in the US and I had no time to make my own, so I just doubled the skinny commercial phyllo and it turned out great.

You can marinate the chicken and leave it in then baking pan the night before. As for the potatoes, they will turn black. You can cut them and submerge them in a bowl of water then refrigerate. Right before cooking, drain their water and add them to the pan with seasonings. Hope this helps!! Xoxo

It looks like it would be easier
to make it if you used regular
pastry dough with butter in it
instead of phylo sheets.
