What I would love to see: 1. some drawing or plan of what you're going to do. i'm sure you're not just going ahead, cutting stuff and putting them together. there is a plan. show us the plan, that will help us follow your steps, and take what we need from your setup, to ours.
2. please discuss planning, choosing, and decision making. you went with gas. you could go with electric. there's pros and cons i guess to each. why did you choose gas? your reasons and considerations are super important to us.
ok this is a good comment....there are advantages and disadvantages to elec and propane. Prior to this build the main disadvantage of propane is the amount of space the tank took up inside the van. I solved that issue with the tank i installed under the van. See the video on that. The elec induction cook top i did on the last van, was great at things like boiling water very fast but that was about it. It's terrible to cook on and very difficult to regulate the temperature. Cooking with gas is just way better. The other issue with the electric is it takes a massive amount of power. It's just not worth using electric in my opinion. As far as the planning goes I do a ton of planning and research ahead of time before i do most things but a lot of it is actually in my head or a basic sketch of what I am going to do. Sometimes I am just sitting in the van starring at the project thinking about the best way to go about it. Other times i actually watch my old videos on the last time i did certain installs like the grey water tank and it reminds me of certain things and then i just try and tweak things with small improvements.

If that’s the thin walled stainless flexible piping for the propane I’d recommend a flexible rubber or braided hose instead due to vibrations. Good luck
Stainless propane piping? No idea what you’re talking about. That doesn’t exist on this van.

What sealant did you use on the pex fitting to the the water tank?
Pipe sealant. Aka pipe dope.
I bought gas line kit for the cook top and in the installations it states not to be used in RV's.
I think it will be fine but it’s up to you
Carefull of S-traps on the p-traps.
