Small Batch Blueberry Muffins Recipe - 6 Muffins

  • These blueberry muffins are so soft and crispy! They are easy to make and super delicious!!
    Ingredients
    Muffins (6 muffins)
    All purpose flour 1+ 1/4cup 150g
    Baking powder 1+1/2tsp
    kosher Salt 1/4tsp
    Granulated Sugar 3/4 cup 150g
    Vegetable oil 1/4cup 55g
    Egg 1 (room temperature)
    Yogurt 1/4 cup 60g (room temperature)
    Milk 1/4 cup 60g (room temperature)
    Blueberries 1 cup 100g
    Streusel Topping
    Melted butter 2 tbsp 30g
    All purpose flour 40g
    Granulated sugar 40g
    Directions
    Streusel topping
    1. Simply mix melted butter, flour and sugar together.
    Muffins
    1. Mix flour, baking powder, and salt. Set aside.
    2.Mix sugar, vegetable oil and an egg together for a minute. Add yogurt and milk. Mix until smooth.
    3.Combine 1 (dry ingredients) and 2 (wet ingredients) together. Using a spatula, gently fold them together for about 30 seconds.
    4. Add in blueberries. You can also use frozen blueberries. if using frozen blueberries, mix 1 tbsp of flour to coat them. This will prevent them from sinking while baking.
    5..Transfer the batter into a muffin pan. Fill the batter all the way to the top to achieve tall muffins. Add streusel topping. This recipe should make 6 muffins.
    6. Bake at 400°F/200°C for 19-22 minutes.
    7. Let them cool for 15 minutes before serving
