    Ingredients:
    3 pounds assorted greens (i.e. kale, collards, mustard greens, turnip greens), rolled and chopped
    1 cup Vegetable Oil
    1 cup All Purpose Flour
    2 Large Onions, chopped
    1 Green Bell Pepper
    3 Celery Stalks, chopped
    4 Garlic Cloves
    2 Bay Leaves

    1 Smoked Turkey Leg, Wing or Neck (Ham hocks work too)
    10 cups Chicken Stock or Water
    2 - 3 Andouille Sausage (I used Chicken Andouille Sausage)
    1 - 2 tsp Cayenne Pepper (optional)
    1 tsp Celery Seed
    1 tsp Dried Oregano
    1 tbsp Garlic Powder
    2 tbsp Sweet Paprika
    Salt to taste

    Gumbo Z’herbes is the proper name created by the late great Mama Queen Leah Chase, from my city…New Orleans. She cooked in her restaurant here at home for decades! From collards to mustards to beet tops, and other greens (9 types), Queen Mother made over one hundred gallons of Gumbo Z’Herbes! Every year, the Thursday before Easter, she served this at the famous Dooky Chase Restaurant! She was a BEAUTIFUL loving legend that lives on connecting ALL people through food. She obviously inspires still and will always! Hugs from THE one and ONLY New Orleans! 💜💚💛⚜️⚜️⚜️🙂

      Instead of using oil for the roux. Can I use vegetable broth to make the roux? Too oil too much fat.

    I am back with an update. After transferring the greens to a pan, I could not pour out the broth. I wanted some black-eyed peas so I cooked the dry beans in the broth for 2 hours. I was amazed at how delicious they turned out. AB, thank you so much for this video!!!!

      @@deliapearsall6334 I know that’s right ! I made it Sunday and it was the boom! I had more collars and smoke turkey in it ,at the end of the cooking I added chunks of green tomatoes I got from the farmers market last year and had froze them. There was no shame in my game, I will have this for lunch or dinner. I made a 12 gallon pot of goodness, and the crispy hot water cornbread with the Kerry gold butter was talking to me. I put the rest in freezer bags for many more enjoyable meals .

    Big Brother AB,
    Thank you at the young age of 75 this proud born & raised Texas girl has never cooked greens. Last week I bought 6 bags of pre-cut collard greens. I didn't have any smoked turkey leg so I used smoked turkey necks. Well today I'm making this! I didn't use full andquille due to my husband can't handle alot pepper so I added beef smoke sausage. I can't wait until I get to eat it. Of course you know I had to put in some shrimp. 😋

    I haven't heard of Gumbo Greens either but I'm going to give'em a try. My mouth was absolutely watering watching you make it and when you finally tasted them, I was a little jealous! Anyway, the only thing I dread about this dish is making the rue. Sometimes I don't have the patience to stand there stirring the rue, but I know that is an important part of it. Whenever I get around to making it, I will let you know how it turns out.

    Made these tonight AB, this recipe is fantastic. The best collards I’ve ever had. The Creole Kick is a 10/10 seasoning I’m so happy you shared and it doesn’t disappoint.     NEVER HAD GUMBO GREENS BEFORE BUT I WILL BE MAKING THESE. IVE SEEN YOU MAKE GREENS WITH THE TURKEY LEGS BEFORE AND NOW THATS HOW I MAKE MINE AND THE FAMILY LOVES THEM. THANK YOU KEEP DOING WHAT YOU DO BROTHER I APPRECIATE YOU. MUCH LOVE FROM TEXAS

    I’m making this right now for Easter and man my kitchen is smelling good! I did a taste test and this is it! I’m not making greens the traditional way anymore. These are delicious!
