    Can you share with me how to make ganache filling for macaron from Callebaut 811 dark chocolate ?
    Is it the ratio the same as you mentioned 1 cream : 3 chocolate ?
    Or do I need different ration to make a nice ganache for macaron?
    What cream should I use in term of fat % ?

    I used callebauts811 for ganache but after poring cream the Chocolate losses his oil why it happened??😭

      Hi Suzie! Any medium fluidity Callebaut chocolate (arround 3 drops on their fluidity scale)! For example, 811 would work perfectly for this recipe

      Usually a ganache is 50/50. Same weight to chocolate and cream

      Hello Vipula, if I understand your question correctly, you want around 1:3 cream to chocolate.

      Is this milk chocolate or dark chocolate

      This is dark chocolate, but you could use milk if you prefer!
