Betty Crocker 1973 Enriched Waffle Recipe:
1 1/4 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3 eggs
1 1/2 cups buttermilk
1/2 cup fat (melted butter, ghee, shortening, or vegetable oil)
Whisk dry ingredients together in a medium bowl. Add wet ingredients and stir until combined. Cook according to instructions on your waffle iron.

we put mashed potatoes in our waffle iron and then I freeze them
In UK we put left over mash potatoes in a frying pan and any other cooked left over vegetables especially cabbage. Its called bubble and squeak. Lots of people put gravy on it. I can not imagine liking gravy with a plain scone you call biscuit.
@@janice2992 grew up on bubble and squeak- our biscuits have a different taste and consistency to scones (which I also grew up on lol) and they are really good
@@janice2992US biscuits are higher fat with fluffy layers inside and delightful with gravy. Scones are delightful as well, just different from biscuits.

Years ago, when we all lived at home with Mom and Daddy, one Sunday night Mom made chicken and waffles for supper. (A Pa. Dutch meal, creamed chicken, or turkey, ladled onto hot waffles) As the 7 of us were finishing up someone suggested getting out the syrup to finish with a sweet so the syrup (Karo) was set on the table. Then someone suggested waffles and ice cream. Mom mixed up yet another batch and we finished the meal with ice cream and home canned fruit on top of the waffles. It was a memorable meal!
That’s how we always are waffles (Yes, I’m from Pa). Another one is for dessert, a nice warm waffle (Belgium, if you make them) and 2 scoops of your favorite ice cream (kinda partial to chocolate). Let the heat of the waffle soften the ice cream a little bit so that you can mush the ice cream over the waffle so you get a bite of ice cream with each bite of waffle. I was a graveyard cook at a truck stop for many years. I would eat my shift meal when I was done my shift. I got so many drivers starting to order this because they were trying to figure out what I was eating.
Cornbread waffles go great with beans or really anything that Cornbread goes with. Potato cake waffles topped with a beef n gravy is also tasty

Am planning on making cornbread waffles in my Belgian waffles maker the next time I cook a pan of beans. I may also make add some canned chopped canned chilis to a batch to mix it up a bit for flavor. I have a ceramic lined Belgian waffle maker and it never ever sticks and it cooks evenly.
Southern woman here…. Waffles, butter, chicken, real maple syrup….yes, please!!
My mother was from Alabama, but we live in NY state. So I'd go to elementary school and say things like, "I had biscuits and sorghum for breakfast." or "We had sweet potato pie." I got weird looks, but I knew those things were delicious and I still make them today. And red velvet cake - not with a cream cheese frosting, but with this really buttery one. With all the red velvet craze the last few years, I just shake my head and think, they've got the wrong frosting.

Chicken and waffles isn't a southern dish...it originated in the north...by the Dutch immigrants settling in the New York, Pennsylvania, New Jersey area... some say it was by the late night jazz players/singers in the clubs not being able to decide at the end of their late night gigs, whether they wanted savory dinner or sweet breakfast...so they fixed both

These are Southern "things."

9th generation Southerner. Chicken and waffles is definitely NOT a Southern thing. Fried chicken, yes, but not waffles with fried chicken. Only in the last 5 or 6 years have I seen it on a menu.
One of my favorite dessert waffles is brownie mix waffles topped with strawberries and homemade whipped cream.😋

I love to make "Chaffles", as I am low-carb. If you haven't heard of them, they are made with cheese and eggs, maybe a little almond flour, Yummy! (P.S. I now have waffle iron envy, lol!)

I like them, too. Just make sure whichever cheese you use is mild, unless you are going for a savory version.
@@bberdan6603 We make Chaffles for breakfast, put them in the freezer and reheat in the toaster. I use 6 eggs, 3 cups of cheddar cheese, and cooked crumbled breakfast sausage or cooked crumbled bacon. We have used the chaffles to make a "sandwich" by putting it on 2 slices of toast as a grab and go breakfast too.
You can make a savory version (garlic Parmesan-yum), cut them in chunks, toast, and you have croutons.
Nordic ware actually makes a cast aluminum waffle iron for cooking on a stovetop. It would work great with a portable butane burner if there’s no power!
You try out so many wonderful things for this community. I am so very appreciative and I know others are as well.
I have the 1973 BC cookbook! I got it as a wedding shower present from my mother-in-law. It's the only general cookbook I've ever owned.
That is so cool! Mine got so used and the pages discolored that I finally tossed it. I never did like the later versions as much as my original 1973 version.
I have an earlier version given to me by my siblings the year we married. Years ago I tore out all the pages and fitted them into sleeves and then into a thick notebook. The dumplings, and blueberry buckle are family favorites from that cookbook.
Can I make a suggestion about your baking powder? The one you are using has aluminum in it!!!! Look for the red can of baking powder it doesn’t.
I enticed my son to learn to cook by having him play with waffles..his favorite food! Of course it helped that we have a waffle iron in the shape of the millenium falcon from star wars! He is now in college and a very good cook. When he comes home, he stocks up the freezer with our favorite savory waffle that has cheese broccoli and red peppers. It's a gift he leaves me with whenever he heads back to school. You can use pretty much any veggie to make a complete vegetarian meal. We often serve it with aioli or a white sauce like bechamel. SO GOOD!
I have a 'Waffle bowl' maker that I love experimenting with for different variations and flavors of waffles. The last ones I made were "Cheese, garlic, jalapeno waffle bowls that I then put tuna salad into. But chili would work good too. Almost anything you can think of that's chopped up small can be added into the batter though.
(Just like bread.)
The only thing that matters is making sure you keep the batter at the right consistency.
I've made waffles with fruit (or fruit spread), peanut butter waffles, grated cheese and spices, Garlic waffles (for sandwiches or gravy over top) and even waffles with potato flakes, cheese and garlic mixed in the batter.

As a single person I bake less bread, which I once made weekly from a sourdough starter. It was wasteful, just couldn't eat all of it. I shifted to various flatbreads, cornbread, pancakes, biscuits, halving recipes and having enough for two meals. Reading the comments is inspiring.
I hope you put your sourdough starter in all those wonderful things you make. How about cooking small amounts of sourdough bread right in your waffle machine? You might have to increase the hydration.

But, one of my favorites is making homemade stuffing in the waffle iron!!!! Extra crispy with some chicken or Turkey a little gravy 🙌
Shredded Potatoes with eggs and ham or ground sausage, cooked in the waffle iron then topped with some cheese once out to melt on the plate.
Norway here: our waffles are a lot thinner. Butter and brown cheese is a norwegian speciality on waffles.
Make cinnamon rolls and cook them in the waffle maker! Fantastic!!
I’ve recently learned about Chaffles. The recipe I use to make them calls for 1 large egg, 1/2 cup shredded mozzarella cheese, 1 tablespoon flour (you can use almond flour, gluten free flour or regular all purpose flour), 1/2 teaspoon baking powder and a pinch of salt. My waffle maker makes round waffles, so I make one, then cut it in half, then make a breakfast sandwich using a fried egg, cheese and cooked bacon. They are delicious!
I add mashed cooked pumpkin, ginger, and cinnamon to my mix and they’re great 😊

several years ago i purchased an antique waffle iron. it is cast iron with rather long handles to be used over a wood stove or fireplace. it works well when camping, and is quite the conversation piece.

South Arkansas born and raised and I agree with the other Southerners comments here - chicken and waffles were never a thing where I come from. I only heard about it for the first time couple of years ago. Love waffles with sorghum syrup, and love fried chicken but separate meals. Loved the video! And I’m loving all the great ideas in the comments. What a great community!
Raised in SC and never heard of waffles and chicken OR fried pickles until the past decade or so. That's not to say some adventurous southern lady didn't 'invent' them. Just not a thing most southerners grew up eating. Lots of new dishes being debuted almost daily I'm sure.
We make Macaroni and Cheese waffles! Really yummy with tomato soup!
I use mine with cake mix for a quick and easy birthday or celebration desert. Black forest waffles :)
I love making waffles using sourdough discard. The batter can be made to taste like ice cream cones.

For me, being diabetic, I do "chaffles" which are a base recipe made of cheese and egg and some recipes have a small amount of almond flour. They are a low carb alternative and can be sweet or savory with add-ins

We had one of those cast iron waffle irons in our cabin. We used a wood cook stove and it set in one of the holes for the burners. It was wonderful.
Mashed banana, finely chopped apple, blueberries or the fruit of choice is wonderful mixed inside waffle batter. Sliced peaches atop the cooked waffle with homemade peach syrup is amazing.

I used to get a waffle sandwich at a restaurant years ago that had ham and raspberry jam. Sounds odd but it was delicious.

Great video!! I have been freezing waffles for years to heat and eat. The grand kids like them as a quick snack. But the few years now I have been making protein waffles. You use 6 eggs, 2 cups of dry oatmeal, 2 cups of cottage cheese (I use the 4%) 1/2 tsp salt and a little vanilla (optional). blend in blender until smooth, (this works better if you layer the ingredients) and make like regular waffles. I usually end up with 10 4" waffles. It comes out to be 10g of protein per waffle. I eat at least 1 a day sometimes 2 for my protein. They are not a light and fluffy as Cindy's recipe but for the protein they are great. I freeze two per quart bag and just toast in toaster.

Ha! I made waffles for dinner with left overs for breakfast. I have kept the dry ingredients mixed in mason jars in my pantry, with the reconstitution recipe taped to jar, for decades. Easy to admit, I am a waffle addict! Nice video👍👍
Pam: You can also use left-over cooked oatmeal to make waffles. An interesting twist on waffles.

I have put left over porridge in a frying pan it gets a bit crispy, good. Scottish used to leave it in a square and take a lump, so many inches deep for lunch.😂 I think they were poorer than us English. That would explain their dislike for us.
When I had my mother living with me she was in her 90’s and needed extra protein. She loved waffles so I would make a big batch on Sundays to freeze . I added in vanilla protein powder (she never knew 😊) and she had her morning waffle heated in the toaster with cling peaches , maple syrup on top every morning. At least she started her day with a good meal 😊

One of the best things I've cooked in a waffle iron is. stuffing. Left over cornbread dressing or stuffing. Also cornbread with added things like jalapeno, cheese, corn, bacon, taco meat...

I bought a cast iron waffle maker just for the reason of using if there is no electricity for use with my rocket stove. I need to dig it out and practice! I feel like i can't live without waffles! 😅 They're the best! 😋 😋 😋

I was a new stepmother of 2 when the pandemic hit. I had an old standard fridge. I immediately bought the ingredients up because there was no way I could store enough waffles in the freezer. I got them into homemade waffles!
Transplanted northerner living below the Mason-Dixon. There are two ways to make chicken and waffles: the southern version: fried chicken on waffles dressed with maple syrup and butter, and northern: leftover roast chicken in gravy served over the waffle. Both styles are even better made with cornmeal waffles!
I was wondering about that southerner thing. My mother was from Cullman Ala, and she never made chicken and waffles. We live in NY state. She made biscuits with sorghum, sweet potato pie, corn bread (hers with buttermilk on it), and all sorts of stuff, but not chicken and waffles. Anyway, thanks for the comment! I never heard of the northern version either, LOL!
@@palominogirl2732 I'm beginning to think fried chicken and waffles may be a southeast thing. I'm from central PA and roast chicken and gravy on waffles was/is pretty common there. I was a cook up north and my first job after moving south was cooking in a monastery where I soon discovered different regional names for the same dishes was a (very confusing) thing.

After watching your waffle video on Trailgrazers, I went to your amazon store and bought the Calphalon. Best wafflemaker ive ever owned! I went crazy with it. Ham and cheese, pepperoni and cheese, bananas and peanut butter, jelly filled and chocolate chip with vanilla greek yogurt, apple pie filling. The sky is the limit!! There used to be a thing called “can you waffle it? It was either food network or Rachael Ray. We’ve made brownies, cakes and other mixes. You can make biscuits and puff pastry ( puff pastry in the waffle iron is called Puffle.) Try cornbread in a waffle iron. It is soooo good.
CORNBREAD! Top with beans, Mexican food, chili, gumbo. Use as pushers with your summer garden "veggie night" dinners, navy beans & ham. My fave is roast beef or pork and gravy.

I have an old Suzanne Somers waffle iron that I liked so well I gave one to my son's family and they liked it also. I love strawberries and whip cream over waffles,
as well as maple syrup. We make our own syrup.
Back in the old days when I ate meat, we had sausage, eggs, ham, bacon, cheese in various combinations.
waffles and chicken were a staple in upstate PA! chicken gravy and waffles were a childhood fave of my husband, whose dad's side is from there, and its all over up there- including restaurants.
Similar to Yorkshire pudding and gravy then. Salt and bit of black pepper in the mixture I would recommend. Yorkshire pudding is done in the oven so it rises. No baking powder or soda. Sausages in it is toad in the hole. Sliced sausages should work in your version ❤
Being a Northerner, Waffles are breakfast food only, maybe leftovers as a (crisped) snack. Pumpkin is fabulous & always good in freezer for toasted fast-food. 1973 the very best Betty Crocker. Foolishly gifted mine away; difficult to find now. Learned to cook bcz of it. Thx for this Update abt Waffles. Just never occurred to me either.

My grandmother would have a hamburger gravy over waffles for dinner on occasion....hubby loves it.
We make Waffles with thin sliced apples, and add vanilla, about a teaspoon, as part of the liquid. Then serve crispy bacon on top. We also sometimes add pecan. Of course plain pecan waffles are fantastic too!

My favorite way to use waffles is as a bun. I use ground chicken and make a buffalo chicken dog. After it's grilled I place it in a waffle and fold it as a hot dog bun. Add all of your favorite chicken wing toppings. It's amazing!!
I have made waffles with cornbread mix, added a bit more liquid. Leftovers turned into sandwiches.. was really good!
We’ve gotten rid of our electric waffle iron and now use an antique cast iron waffle iron. One of our favorite savory waffles is made with leftover stuffing. A stuffing waffle with leftover turkey and gravy…….oh my gosh!!!👅

English or French pancakes (crepes) are also very versatile, and historical. One of my favorite uses is to make noodles out of the pancakes and put them in soup.
@mr.somebody1493 please tell me an English person is British pancake batter the same as waffle batter but with baking powder and soda also what difference do they make. 👍
@@janice2992 Pancake recipes vary, but what I'm referring to is a thin pancake like those made before the invention of baking soda or baking powder. Just Flour, egg, water or milk salt and butter. Similar to a crepe, but a little thicker. Delicious and versatile.
@@mr.somebody1493 That's the pancake that I know, no butter a drop of oil to prevent sticking. Not done in the mornings it takes too much time. We do it on shrove Tuesday? Its called pancake day. I made porridge for breakfast for my children. Pancakes is a poverty meal when mothers didn't have anything to give children at 5pm instead of a main meal. I assume then American pancakes and waffles are thicker? Pancake batter with salt and black pepper in is Yorkshire pudding but done in a bit of very hot oil in the oven for 20 mins about 375°

@@mr.somebody1493 @janice2992 In America, waffle batter is a thick pancake batter. Our pancake batter is made as thick or thin as we want our pancakes, even to a crepe thinness. I guess its because we are a "melting pot" country. We have ancestors from all sorts of countries around the world. So our recipes can come from one country and get altered from ideas we have gotten from other countries. My family ancestors are from England, Scotland, Germany, and native America. My husband eats my sourdough waffles nearly every morning until I need to make a new freezer batch. He raves about them. I keep a well stocked pantry with Costcos pure Maple Syrup . King Aurthur has an excellent sourdough waffle recipe. I use a similar one replacing the buttermilk with 1 1/2 cups of water when I don't have buttermilk. I also use Liquid Organic Refined Coconut Oil (is flavorless) for the oil used in my recipe. Also works well with Egg Replacement powder for those who like to avoid eggs.
I prefer my round shaped waffle iron because they are easier to remove from the waffle iron.

cornbread waffles will turn a small amount of leftover chili into a meal for 2-3 people. Make the waffles, top with the heated chili and garnish with a generous portion of shredded cheddar or pepper jack cheese. No one will walk away hungry with this!! Many cornbread waffle recipes on the googly machine - choose your favorite!
I recently made sourdough waffles from Maurizio Leo's book. Started them in the AM and made the waffles that evening. They were light, crispy, and wonderful!

Pancakes are great too. I make blueberry pancakes also, for my pet pigs, and keep them in the freezer. They either share a pancake or a waffle everyday in their breakfast. Just pop them in the toaster. Thank you Rose Red and Jim. I have learned a lot from your channel. I never thought about using the dried buttermilk and eggs.
South Africa here: we have a Dutch restaurant at a farmers market - all located at a huge windmill - who serves savoury waffles. You have renewed my interest in waffles! I have my mom's Betty Crocker cookbook which is 1st edition 3rd printing from 1950. It is identical to your recipe with one exception - the richer waffle recipe (that matches yours) has a different measure for flour. It calls for 1 3/4 Cups of sifted flour.
Have the same waffle maker and the company has sales, I get notifications from Calphalon I get great results too. Look forward to your recipes, yes they freeze very well. Thank You RedRose 👏👏👏

I use a round traditional waffle maker and a couple of Dash mini waffle makers. My Granddaughter loves them all of the time.

I’m gluten free and T2 diabetic, so I make waffles with coconut flour, eggs and cheese. I use waffles instead of bread and I make salad sandwiches with ranch dressing or mayonnaise. The waffles can be frozen and heated up in the toaster oven when you need them.
At Thanksgiving, we had a lot of stuffing leftover. Spent the next few days turning the stuffing into waffles. It was totally delicious!! The stuffing was wonderfully crunchy, like when it first comes out of the oven. Everybody in my family loved them!!
After watching your video, I had to make waffles for supper. I made them with freshly ground soft white wheat and buckwheat. They were delicious!
What an awesome thing - I've always made waffles that had to have the whites whipped which makes for us not having them very often - game changer

We like to crumble cooked bacon or sausage and mix with the batter. I bet it would be great with mixed shredded chicken.

I intend to get right on that waffle thing! Can you tell me what you would recommend as a portable generator (electric or solar) for the kitchen in a pinch? There are so many choices and I want something that will allow using a few electrical appliances and fridge. Thank you for such a great channel and I love that you and hubby do all these things together!
Absolutely live every video. With this one on waffles it will change every way i eat. Now at 83 yrs in 2 weeks my entire menus will change. And it will allow my grandson also a new and versatile way to cook and plan menus ahead.
diabetic here in my house so i make garlic waffles with egg cheese and some low carb flour so many variations
This looks like a great recipe for the batter. It would be great with savory ingredients! Sweet, too, but savory waffles will be new for me. You can put many of your pressure canning recipes/foods over these!

Wonderful Micro Moment Rose. I Love having Blueberry Waffles with Vanilla Ice-cream. Or Whip cream topping and mix fruit. My daughters love when I use Veggies in the Waffle mix. After typing this, I’m planning my next Breakfast 😂.

The main use for my mini dash waffle maker is I quick fry 1 egg & put a slice of bread with small spread of butter to toast & I'm out the door with no real wash ups.😅
Betty Crocker is tried and true. I still use those cookbooks all the time when I’m looking for a recipe and she rarely steers me wrong. Good for basic recipes and I occasionally alter them to suit our tastes.
PS my mom often laid a cooked slice or two of bacon in the waffle batter and then cooked in the waffle iron and that was such a treat. Delicious. Much like your ham & cheese waffle sandwich. We had the old fashioned iron that cooked on the stovetop and you had to flip the iron over. I wish I still had that one.
