June is using non-functional harmony, so polychords and extended chords over bass notes are a useful shorthand. If we look at all these pitches in relation to G, we have: 13, Maj7, ♭9 (or ♯15, if we must), 3, ♯11, ♯5, and ♭7. Would you prefer to call it a G13(♯5 ♭9 ♯11 add Maj7) instead?

The meme is that he keeps on adding more and more voices until it becomes impossibly dense but the voice leading principles still apply and that's what make these exotic voicings work. And just in case your question is about the title of the video. Contrary motion is simply two or more voices (or parts) moving in opposite directions. For example, I might play C major ascending in my right hand and C major descending in my left hand. That is an example of contrary motion.
