Sweet Pickled Onions - Saucy Sunday

    Unlike the standard pickled red onions, these will have a little sweeter taste. Enjoy this with salads, pizza toppings, low carb wraps, on top of burger patties, etc. A sweet and tangy recipe to help add a little flavor to your low carb diet.

    Equipment:
    Storage Jars amzn.to/3yMmsDz
    Strainer amzn.to/3mUJ1TP
    Ingredients:
    1 large red onion, sliced
    2 cups white vinegar amzn.to/3n2zwSR
    2/3 cup water
    Sweetener = 1 1/4 cups sugar amzn.to/2hReroU
    1/2 tsp salt
    1 Tbs black peppercorns amzn.to/2SyMkid
    2 cloves garlic, sliced
    Directions:
    1. Add sliced onions and garlic to a mason jar and set aside.
    2. Add vinegar, water, sweetener, peppercorns, and salt to a sauce pot
    3. Place the sauce pot on high heat. Stir to dissolve salt and sweetener. Let boil for 3-5 minutes.
    4. Strain the peppercorns (optional).
    5. Add liquid to the onions. Place the lid on the jar and let come to room temperature (I like to flip upside down halfway through cooling).
    6. Place in the refrigerator for 24 hours.
    Makes 20 servings

    In my fridge, I keep a big jar of sliced cukes and onions from my garden with vinegar & sugar all summer long. Now that I'm low carb, I use a sugar sub and still enjoy my summer treat. Thanks for the vids!

    I cut my onion in half along north-south pole, then slice the onion N-S too and you get more even strips. I leave any seasonings (peppercorns, mustard seeds etc) in the pickle jar

    Papa g think you could develop a recipe for vanilla syrup using low carb sweetners? I have tried several different Regular recipes, subbing out sugar for sugar subs but they have come up short. Could be the Vanilla I'm using but no clue

      Hi Alex. About 3 years ago a made an amaretto recipe ruclips.net/video/YLnCiucgqVM/видео.html . Maybe use that recipe as a base (minus the vodka) and see if it turns out like you want.

    Sounds really good how long you let them sit? And how long do the last?

      Hi Marvella. let them sit in the refrigerator for at least 24 hours. How long the last, depends on how much you like them... only kidding 😂 They should last for at least 2 weeks to a month.
