this is actually very close to my regular pasta recipe. I try and watch the butter and cheese bc I eat it pretty much once a week, but making a marinara sauce for one is time consuming and feels pointless so a cherry (or baby plum in my case) tomato sauce is perfect. I also add an ungodly amount of dried oregano. Absolutely perfect pasta dish

I do this with those multicolored cherry tomatoes, and it comes out this beautiful orange and a bright, sweet flavor. I also love to use an immersion blender to make it a little less chunky but still rustic. You can also take essentially the same recipe and make a really great bisque-type thing by blending it until super smooth in a regular blender. That works spectacularly wherever a tomato puree or tomato bisque works
I just made this for my parents for dinner and they really enjoyed it! I’m so proud of myself for cooking something nice and helping out by making dinner for my family :D

This is coincidentally very similar to what I like to make a lot, but I prefer to put the mozzarella on top cold and avoid mixing it in so that it stays unmelted and you can add a piece to each bite. I feel like the unique texture of fresh mozzarella is lost if you allow it to melt.

We made this today, but substituted burrata for the mozzarella, and added more pasta water and tomatoes. To each their own, but I like how it came out more like a tomato sauce enhanced by cheese than a cheese sauce enhanced by tomatoes.

I've taken to using your food processing technique for pasta al burro, but instead of overloading on fats, I turn it into al uovo and just use an egg, lots of pecorino, and maybe a tablespoon of olive oil. Once properly blended, I just dump that cheese sauce into drained, freshly cooked pasta, re-add the pasta water, give it a short burst of heat to melt the cheese and fully emulsify the sauce. Works every time.
My Italian boss made us breakfast pasta 🍝 was basically what you made but it was made for any meal wasn't fancy but he always did it up the way you wanted you wanted it spicy or cheesey he would take time out of his day to make it up for you so you get a decent meal and kept it going! 😋 I miss working for him!

Just put your grinder kief into some parchment paper, fold it up tight into a bindle, wrap that in newsprint & apply the iron for like 3-5 min at a time. Open it up & fold the hash over itself a few times, repeating the process and boom you got some fine brown hash to smoke.

Marinara sauce is great to freeze though. So if you make a bunch just freeze the extra.

My late night pasta is I take ranen ( not instant but still very quick and easy) and because there’s no flavor you can customize it any way you want give it a Japanese/Chinese flavor and sometimes I will add some some frozen birria from Trader Joe’s and make birria ramen

I know. Rigatoni is one of my favorite pastas, and then when he added the other pasta to the sauce, I was so confused.
Yeah, kind of disappointed, actually.
Rigatoni acts kind of like a scoop, meaning you can get so much sauce-y goodness in it.
He realized fusilli are better for catching sauce and mozzarella in this plate
I'm going to hazard a guess and say the original didn't record properly or wasn't to his liking so he's done another take and kept the original intro.
