Never thought about the blanching with vinegar. I had been blanching like making French fries. Wonder how French fries would be blanched like this? Thanks Matt :)

In The Kitchen With Matt - I don't see where it would save you much as far as steps. I mean you are still blanching, it's just the fries was with oil and the chips or crisps are with water/vinegar mix. The cool down time would be replaced with the time to wash & dry the fryer before using it again. BUT I am thinking the French fries would not have as much oil in them and probably taste lighter too. Not to mention a bit more healthier for you!
Good video. Will have to try this sometime. I just tried to make sweet potato chips in microwave but had to slice carefully with a knife as I didn't have a mandolin handy. They didn't come out perfect but tasted good as sweet potato slices. (I only used salt, pepper, and a little olive oil.) Will try your recipe sometime. Thanks! :)

mmm I am not really sure on how to extend the shelf life. These ones, after I make them, they stay pretty crispy for at least a week in just a ziplock sandwich bag. I haven't tested how long these homemade chips will last though. Good luck! Sounds like a great idea.

Thanks how long did u let the chip dry out.... I must had missed it. Does the chip have a vinegar taste to it from boiling them in that vinegar solution.... and if u decide to season ur chip do u do it before or after frying the chips
Dry out after it cooked or after they soaked in the water? Each time I didn't let them dry to long. After soaking I just patted them dry with a paper towel. :) Nope there wasn't any kind of vinegar taste. :) You would season them after frying. :)
I'm going to make some now, thanks for the inspiration, Matt!!! I use rice bran oil which has a really high smoke point of 470 degrees so I am able to use much less oil. Perfect for chips frying. : )
Crazy! I’ve never thought about coocking before frying. I am cocking since I was 12, so about 22 years now, and the chips was always a bummer for me. Never get to doing it right. Either they are to soft inside, or burnt... I’ll defo give it a try. Any tips for a beetroot version? I love beetroot chips...
Awesome Tom!! Yes please do give them a try and see how they turn out for you. Awesome profile pic. I love the Witcher! I started playing Witcher 3 again. lol so many hours into that game. For the beetroot chips, cut them super thin, like I do in this video. Then sweat them a bit, using salt and a little oil. This will get out the excess moisture which will help them to crisp up. Then bake them in the oven around 300 F for 45 or so minutes. Until the get crispy. You could also deep fry them at a lower temp around 320 as well, like I do the potato chips. :)

Hello Matt Success. I was not cooking the chips long enough.l am waiting now until the oil stops bubbling. Exactly what you said to do. I was afraid the chips would burn and took them out to early.. Awesome!! Yes you can take them out a little sooner without being soggy, so they look like mine in the video. :) Just make sure your oil isn't too hot. 320F is perfect. (160C)

Hi Trina, I just store mine in a zip lock back, and a week later they were still nice and crispy. You need to wait until the chips are completely cool at room temperature before you put them in a bag to store. :)
Hi Deborah, I don't recommend it, but you can always give it a try that way. Try this, after boiling them in the water and vinegar solution, dry them and place them in an airtight container in the fridge, until you want to fry them.
the first batch were bad because the oil was too hot but the 2nd batch was perfect after i figured out the right temp and i only burned myself twice LOL they were amazing and we loved them . THANKS AGAIN !!
Hey,I'm 13 and just was feeling for chips to watch with my shows,and I found your video,it turned out really good.I used a knife,but the ones that didn't come out good,I just sliced them into fries.So all in all I really enjoyed this recipe
@@inthekitchenwithmatt Alas, my attempt still didn't quite work that well. I have a deep fryer, and mostly I got very uneven chips that were dark brown in spots and soft in the middle. A few that I had in the hot water and vinegar for a lot longer were more even, but still hard to grab at that right moment between overcooked and soft.
@@inthekitchenwithmatt My fryer has presets for 265, 300, 340 and 375. I tried a little batch in each. I've experimented with boiling before, and the last time they cooked too much and broke up because of the violent rolling action, so I went a little easier on them, around 190. It definitely made a difference on the texture of the ones that were in there longer. (I only had Apple Cider Vinegar, BTW.) The slices were about 1/16" thick, maybe a little more. They were cold soaked for at least half an hour with multiple water changes.
@@Dr_Mauser mmm no 325 F setting? That seems to be the perfect temp heat for the oil, at least in my experience. It allows it to fry it long enough without being too hot to burn it, before they are done.
Finally! Now I can make them without burning the crap outta them. I've tried I don't know how many different ways to make potato chips. Speaking of which...I tried baking them at a low temp in the oven this morning, in a pan of oil. Not tons of oil, just enough to coat them all. They still burnt to shit, even at 250 degrees. haha! I am so sick of buying chips and having probably 1 potato's worth of chips in the bloody bag. Gonna try this tomorrow. I'm addicted to chips, so yeah, I'll be trying tomorrow for sure. Omg I was chowing down on these things like crazy last night. And they were still crunchy even then. Not sure if I could let them sit longer because it is hard to resist eating them. :)
You are welcome! These chips that I made were still crispy after 1 week, being in a zip locked plastic bag. I haven't tried this with sweet potatoes, so I am not sure how long those stay crispy. You can try zip locked bags.

Hello Matt Hope all is well with you. Matt l am having problems with my chips being soggy in the center. Have tried a couple of things to correct. Doing a better job with drying the chips before cooking. Also tried letting them dry for a couple of hours. Still have many soggy chips. Hi there, did you follow this recipe exactly? or are you using another recipe? Double check your heat of your oil, make sure it is around 320F/160C. You may just need to cook it longer. Also, make sure they are cut super thin. Did you use a Mandolin slicer or just a knife?
Hy Matt Yes l have been following the recipe. I also bought a slicer which is very helpful. I believe my problem maybe l am not letting the chips cook long enough. My daughter-in-law got me hooked on Lays classic potato chips. I can eat a whole bag in an evening. I only buy them when they are on sale, but still more than I want to pay. I’m going to try making some, hope I can do it. 😊

Hiiii!!! so i dont have the mandaline slicer, so like how to i cut thin slices. Like what knives do u reccomend
You will have to use a knife, but be very careful. :) It is possible to cut them thin enough, but more difficult.

Yes you can! but maybe use a smaller pot, so you don't use so much coconut oil, since it is much more expensive then canola oil. :)

Coconut oil has a much lower heat range. Will smoke and burn easy. Oh use canola oil I think the burn rate is at 400 degrees.
Please don’t use coconut oil for deep frying.

Success. I was not cooking the chips long enough.l am waiting now until the oil stops bubbling. Exactly what you said to do. I was afraid the chips would burn and took them out to early.. Thank you again for all your help.

PS. The chips are a little brown. Can l get them almost all white with out being soggy in the middle.
Awesome!! Yes you can take them out a little sooner without being soggy, so they look like mine in the video. :) Just make sure your oil isn't too hot. 320F is perfect. (160C)

How do we save them for later? I tried them and it turned out well at the moment. But when I ziplocked them it flattened. How do I prevent this to eat later?
Hi Trina, I just store mine in a zip lock back, and a week later they were still nice and crispy. You need to wait until the chips are completely cool at room temperature before you put them in a bag to store. :)

Can you do the first water and the vinegar steps and then wait a few hours before you fry them?
Hi Deborah, I don't recommend it, but you can always give it a try that way. Try this, after boiling them in the water and vinegar solution, dry them and place them in an airtight container in the fridge, until you want to fry them.

the first batch were bad because the oil was too hot but the 2nd batch was perfect after i figured out the right temp and i only burned myself twice LOL they were amazing and we loved them . THANKS AGAIN !!

@@inthekitchenwithmatt Alas, my attempt still didn't quite work that well. I have a deep fryer, and mostly I got very uneven chips that were dark brown in spots and soft in the middle. A few that I had in the hot water and vinegar for a lot longer were more even, but still hard to grab at that right moment between overcooked and soft.
@@Dr_Mauser mmm what temp did you have the deep fryer? and you boiled them and not just soaked them right?
@@inthekitchenwithmatt My fryer has presets for 265, 300, 340 and 375. I tried a little batch in each. I've experimented with boiling before, and the last time they cooked too much and broke up because of the violent rolling action, so I went a little easier on them, around 190. It definitely made a difference on the texture of the ones that were in there longer. (I only had Apple Cider Vinegar, BTW.) The slices were about 1/16" thick, maybe a little more. They were cold soaked for at least half an hour with multiple water changes.
@@Dr_Mauser mmm no 325 F setting? That seems to be the perfect temp heat for the oil, at least in my experience. It allows it to fry it long enough without being too hot to burn it, before they are done.
Finally! Now I can make them without burning the crap outta them. I've tried I don't know how many different ways to make potato chips. Speaking of which...I tried baking them at a low temp in the oven this morning, in a pan of oil. Not tons of oil, just enough to coat them all. They still burnt to shit, even at 250 degrees. haha! I am so sick of buying chips and having probably 1 potato's worth of chips in the bloody bag. Gonna try this tomorrow. I'm addicted to chips, so yeah, I'll be trying tomorrow for sure. Thanks Matt! :) I sure hope your way works for me.

Omg I was chowing down on these things like crazy last night. I had bought a package of dill dip back awhile ago and just thought I'd sprinkle it on the potatos as they came out of the hot fryer and that just made the chips all that much better tasting. Damn those were delicious. I need a lighter oil though, otherwise I'm gonna get fat in no time. BWAHAHA! Thanks again for your perfect method. First time in my 56yrs of living...NO burnt pototo chips. WOOHOOO!!
Hurray!!!! Wendy that is awesome! So glad you made them and liked them. You may want to experiment with storing them. The longest I have ever stored them was like 6 days in a zip lock bag. And they were still crunchy even then. Not sure if I could let them sit longer because it is hard to resist eating them. :)

You are welcome! These chips that I made were still crispy after 1 week, being in a zip locked plastic bag. I haven't tried this with sweet potatoes, so I am not sure how long those stay crispy. You can try zip locked bags.

Hope all is well with you. Matt l am having problems with my chips being soggy in the center. Have tried a couple of things to correct. Doing a better job with drying the chips before cooking. Also tried letting them dry for a couple of hours. Still have many soggy chips. Would greatly appreciate your suggestions to correct this problem.

Hi there, did you follow this recipe exactly? or are you using another recipe? Double check your heat of your oil, make sure it is around 320F/160C. You may just need to cook it longer. Also, make sure they are cut super thin. Did you use a Mandolin slicer or just a knife?

Yes l have been following the recipe. I also bought a slicer which is very helpful. I believe my problem maybe l am not letting the chips cook long enough. I will be making another batch soon and will let you know how l made out. Thank you very much for your response and help.

@@arlynnhenderson2428 Awesome! You are welcome! A good indication is to wait until there are almost no bubbles around the chips, and when you pick them up with a ladle, spider strainer, tongs, etc. they will feel and sound crispy. Good luck and let me know how the next batch turns out.

Hi Vivek, you can use pretty much any potato. They will each turn out a little different depending on the potato you use.
