I love the way you present and prepare your food. I would never waste any dressing left on the bowl and like you would do the same to clean the bowl. Are your store in the US?
I know red wine vinegar is traditional, but I much prefer white wine vinegar. I also like red finger chilies for a little extra zing. Great recipe, thank you for sharing.

I made this for dinner tonight. Couldn't find tortellini but I did get Cheese Ravioli. It is a really nice salad. Used Athenos feta added artichoke hearts. It was great~!! I did cheat on the dressing. I added mustard and a wee couple drops of liquid Lecithin. The Lecithin makes for an emulsion that does not break.
I put some of the salad into the dressing too. Or pop croutons homemade in to soak some up. Thank you. Tip Add to glass jars(not plastic)pop protein on top without dressing store in the fridge. On the day you need it add dressing. I do this cause I'm writing my books so it saves time. Lemon n orange zest n juice adds a zing to it to.

However it's the Americanized classic gyro that brings them in,and to see the menu. Finding a good restaurant location is key most part. Greek grille north port Florida.

I am not a big fan of cold pasta but the fruit and veg is right up my street. I might make the salad and add some strips of toasted pitta bread drizzled with olive oil instead. Can you get American olive oil there or is it all imported?

If you can get feta in brine, that is the best option. If it is too salty, you can rinse it under cool water :)
