Easy to make Zucchini & Cheese Parcels Recipe with a Twist by Chef Amrita Raichand

- Chef Amrita Raichand shares a mouthwatering, easy to make recipe for Zucchini Parcels that are sure to become a family favorite.
These parcels are filled with a flavorful mixture of zucchini, cheese, and herbs, all wrapped up in a crispy, golden pastry.
Whether you're looking for a tasty appetizer or a satisfying main course, these Zucchini Parcels are sure to impress.
Ingredients:
Green zucchini- 1
Boiled Corn (coarsely ground) 100gm
Mozzarella cheese- 1/4cup
Chopped garlic- 1tsp
Oil-For frying
Mixed herbs-1/2 tsp
Chilli flakes-1/2tsp
Crushed black pepper-1/2tsp
Salt to taste
Breadcrumbs-1/2cup
Refined flour-2tbsp
Method:
In a pan add 1 tbsp oil, chopped garlic and chilli flakes followed by the crushed corn. Now season with salt, pepper, add the mixed herbs & give it a good toss.
Take it off the flame and allow it to cool..
Add the Mozzarella to it
Now slice the zucchini really thin over a mandoline .
Heat oil for frying.
Make a slurry with flour & water.
Take one zucchini slice & place another slice across and on top of it (like a +sign), add filling in the center & close the four sides.
Make all the Parcels like this.
Now dip each parcel in the slurry & coat them with breadcrumbs. Deep fry on medium flame till golden brown.
Serve hot with a dip of your choice.
