【Vegan】Tom Yum Soup with Vermicelli and Coconut 🥥Water

  • I like to have some sour and spicy Tom Yum soup in hot summer. It's particularly comfortable after sweating from drinking the soup. Today, I made this coconut version of Tom Yum vermicelli soup, and it was a pleasant surprise. Adding coconut water gave it a hint of sweetness amidst the sour and spicy flavors, which was really wonderful!
    Ingredients:
    Longkou Vermicelli
    Crispy Tofu Rolls
    Zucchini
    Potato
    White Beech Mushroom
    Tofu
    Coconut Meat Slices
    Soup Base:
    One Coconut (about 400ml of coconut water)
    3~4 Tbsp Vegan Thai Style Tom Yum Paste
    2 Tbsp Tomato Puree
    150 ml Coconut Milk
    Seven Cherry Tomatoes
    Two Small Limes
    Cilantro
    Sea Salt
