How to make ANY Flavor of Fruit Curd!

- Most people are familiar with lemon curd, but this video will show you that just about any fruit can be used
The recipe below makes about 1 1/3 cups . I did a full recipe in the video but divided it into thirds (one third of the recipe for each flavor I made).
Ingredients
¾ cup fruit juice or puree
1 tablespoon grated lemon zest
1/4 - 1/2 cup sugar (adjust according to taste & type of fruit)
3 eggs
½ cup unsalted butter, cubed
additional pectin optional
Directions
1. Puree & strain fruit
2. In a 2 quart saucepan, combine juice/puree, sugar, &eggs. Cook over medium-low heat until nappe (thick enough to hold marks from utensils).. about 5 minutes.
3. Remove from heat and whisk in butter.
4. Strain again into bowl set in an ice bath, then cover with plastic wrap or put in air tight container to limit exposure to air.
5. Refrigerate until set.
store in fridge up to 3 weeks or freeze up to a year.

Most welcome 😊 ..Bonus: As someone else pointed out, you can make your life even easier if you do it in a double boiler instead of directly in the pot on the stove. That would probably be best for beginners

You actually dont really want to do it in directly in the pot, just do a bath, so take a heat proof bowl, warm some water on medium heat and place the bowl in the pot!

How much sugar would you add to make lychee curd please? Love your video👌
I have never made lychee curd but that sounds delicious! I would think probably the the same amount as other sweet & tart fruits like raspberries. Look for a raspberry curd recipe online and see if you can just do a swap

How many days can the mixture be kept in the freezer?
Online sources say "curd can be frozen for up to 1 year without quality changes when thawed. To thaw, place container in a refrigerator at 40°F or lower for 24 hours before intended use. After thawing, consume within 4 weeks."
Is there something else we could use to thicken? I want to try making a tart but am worried the curd won’t be thick enough
You could try adding some gelatin, pectin, or agar agar
If use liquid pectin, how much do I add please? 🤔
I have never used liquid pectin so check to see if you can find a conversion table online
