Dear Vincenzo, there seems a mistake in this recipe. For the gnocchi, you count three ingredients only: 1/2 kilo ricotta, 300 grams flower, 1 egg. When you prepare the gnocchi, however, you also add pecorino cheese as fourth ingredient you didn't mention before. So we need to know HOW MUCH pecorino cheese to add!
@@frederik2220 I couldn't find Guanciale for the Carbonara but with the pancetta it tasted good! The risotto was also very good, I just forgot to add the butter in at the end and instead of using wine to start the cooking process of the rice, I subbed it for water. Still very delicious but I need to revisit it.
Wow looks great. I have been making your gnocchi practicly every weekend and freezing them for quick weekly meals. I will definitly try them caccio e peppe. 😀
@@bokjuuu I did end up using the same amount as he does in the video. I didn’t find it overkill at all the cheese is fairly salty so it’s actually pretty well balanced in the end and with just a little extra warmth from the black pepper than you’d usually get in a pasta dish.
@@bokjuuu it's actually a balanced dish, it's a traditional one here in Italy too (not gnocchi, pasta cacio e pepe in general). When we don't know what to eat, just go with pecorino, pepper and pasta, done....but done well

I've done it tonight and even with cheap ass gnocchis and gran padano it was great, no doubt it's even better with top quality ingredient. Now you're right, forgot to take the pan off the stove and it became stringy, you don't want that, will do better next time, thank you maestro!

Just today I made gnocchi for the first time, I did it with leftover mashed potatoes in a ricotta, pesto, parmigiano sauce using leftover pasta water. It was fantastic!

If you're lactose intolerant but not allergic to dairy, you can make it: just make (or buy)potato gnocchi instead of using ricotta. Pecorino DOP is lactose free due to the fact it's not made by cow milk. Give it a shot, it's really good.

I'm so thankful cheese and other cultured milk products have only a small fraction of lactose compared to, say, pure milk or cream. I can totally eat this without, uh, distress lol.
In the UK we do like to brown the gnocchi in the pan for texture and for added flavour and to ensure the gnocchi is not soggy and limp with the weight of the sauce 🤔

For the dough i used: 200gr feta / 50gr pecorino/ 200gr strained yogurt (i dont know why they call it greek) / 1 egg / 300gr 00 flour / Pepper For the sauce: 200gr feta / 200gr plain yogurt / pepper For another take for a not so strong sauce, you can use 100gr feta and 100gr white cows cheese

Gnocchi is the italian word for dumpling, so any sort of dumpling is gnocchi. There are hundreds of different kinds of gnocchi. Potato gnocchi is the most popular so it often gets shorthanded to gnocchi.
Oh my... The best January 1st, on record, after watching this video. Will try for sure. Btw, there are pills that we lactose intolerant can buy (at least in Sweden) to help the break-down of the lactose in the ricotta. As for the pecorino, that has no lactose 😉

pecorino don’t have no lactose, it’s cured to the level where the cheese loose the lactose.
The lactose isn’t supposed to be a problem when it comes to hard cheeses
I'm pretty sure aging the cheese naturalizes lactose.
Hard cheese like parmegiano shouldn’t be an issue

actually, people who are lactose intolerant can usually eat sheep cheese (pecorino) without issues. just use a pasta that doesnt have ricotta

You can use goat ricotta if they sell it where you live, no lactose there and it has a really nice flavour
