- Garden egg stew is one of the most popular stews in Ghana. Garden Eggs is an African eggplant known in Ghana as nyadua in the Twi language, s3b3 in Ga, ntrowa in Fanti, and Agbitsa in Ewe. INGREDIENTS:
* 20 Garden Eggs
* 2 Tbsp Tomato Puree
* 10g Fermented Fish (Momone)
* 750g Salted Cod (You can also use Kobi)
* 1 Medium Chopped Onions
* 1 Tinned Tomato ( You can also use fresh tomatoes)
* 3 Tinned Mackerel Fillets
* 1/2 Cup Plam Oil
* 4 Scotch Bonnets (Add more or less)
* 1 Medium Onion
* 4 Small Shallots
* 6 Garlic Cloves
* Thumb sized Ginger
* 2 Maggi Crayfish Cubes
* 1/2 Tsp Black Pepper
* 1/2 Tsp White Pepper
* 1/2 Tsp Mixed Herbs
* 1/2 Tsp Ground Coriander
* 1/2 Tsp Ground Cumin
* 1/2 Tsp Adobo Seasoning
* 1/2 Tsp Badia Complete Seasoning
* 4 Eggs

Looks amazing, looking forward to trying this... the only thing i am not familiar with is the momone... so that's something to look into... but being in Hawaii, if I can't find it exactly, I'm sure I'll be able to find something similar (lucky for me, we've got a pretty good hodgepodge of peoples here)

please the cod you used, is it the same as kako
No Kako is made from Puffer fish. Cod is a different kind of fish. You can use salted fish or koobi :)

You can use Kobi (salted tilapia)

It’s a personal preference
Too much seasoning and also you have to take off the skin and the seeds before grinding it
