How To Bloom Gelatine (Sheet) Correctly

  • Blooming of gelatine is a crucial step to learn and understand if you want to achieve consistency in your product without fail.
    Some recipe will ask you to bloom gelatine sheet with any amount of water and rinse off excess water when the gelatin sheet is soften. But how can you ensure the amount of water absorbed by the gelatine sheet each time when you bloom? And how much excess water you have rinsed off? If you practice this, you will get different quality of gelatine every time with different outcome, texture and mouthfeel of your product. This is a big NO for those in business.

    Wow, the instructions in my package don’t say to let it sot for 30 min. That’s new. I also discarded the cold water I let the sheets sink in for 5 min. I didn’t know you don’t need to add cold water to the hot water with the completely melted gelatin at the end. Wonder why the instructions in my gelatin say so.

      Our method is to keep consistency for every batch of dessert making ya, so this is the best way to make sure fixed amount of water absorbed by the gelatine sheet, and pre-melted (very minimal heat) is to make sure all gelatine dissolve before adding in any mixture. Of course if you are using small amount of gelatine sheet, and familiar with your working recipe, you still can use the general blooming method 😊

    When i dissolve it in the microwave , i can use it in cheese cake lotus ( cold ) ????

      Can dear,make sure the gelatine fully melted. Then can mix with other mixture .
