    We live mainly on fresh ground chuck. A high end grocery store here “Fresh Market” has fresh ground chuck for $3.99/lb every Tuesday. We keep our freezers full. They grind it to order for large orders. We usually buy 36 pounds every other week. They pack it in 3lb packs for us. We spend aprox $200/mo on freshly ground chuck.

    Place a pound of 80/20 ground beef in a large non stick pan. Roughly chop the beef with a flat wooden spoon or spatula. Throw in some butter and salt. I cook mine medium rare, but cook yours until you’re happy. Dump everything into a pasta bowl. Bring same pan up to heat, add butter, four eggs and salt. I cook mine over easy, but cook yours until you’re happy. Plop the eggs onto the beef. Grab a large spoon and eat everything (all the beef fat, butter, meat and eggs). Most people will be done for the day after eating this meal.

    Try using the egg shell to separate the yolk from the whites. The yolk stays in the shell easier than in your hand. Great idea though, I'm trying this tomorrow!

      I always manage to break the yolks and make a mess when I use the shells. Probably because I’m too impatient…..

    I saw a TikTok video or something a long time ago where somebody used a empty clean plastic soda bottle and they use it like a suction cup to pull the yoke out of the white that they had cracked open on a plate. It seemed to work perfectly.

    I’m with you Jay regarding rendered fat…I like it to a point then begin to feel a little queasy. I noticed this especially when I’d slow cook a chuck roast in the crock pot…it tasted great just too rich for me. Now I do chuck roasts at 300 for an hour or longer if needed.👍. Thanks for posting.

      I do ok with the slow-cooked chuck roast, probably because the fat gets rendered at a lower temperature.

      I agree Stanley. Some of us can only have so much rendered fat. My main fat source is butter as it agrees with me more. 🧈

    I'd have to add some crumbled bacon to that but I'm a burger topped with an egg and bacon fan 😂. It's one of my favorite carnivore meals. Your beef and egg yolk scramble looks delish! Have you tried it with ground bison? I bet that would be good, though not as inexpensive.

    I never drain my ground beef. Leave the fat add the eggs and let them soak up the fat. But I understand why some drain the grease. I also like to add bacon grease to my ground beef....YUM!

    I also have a sensitivity toward beef. My doctor told me I could have a sensitivity towards heme iron. I would guess the draining the pan as you do you’re getting rid of some of that heme iron instead of ingesting it

    You can make alot of things with 5 egg whites, if its budget friendly then next time save em. Also save the oil from ground beef. Keep em in fridge and can use on other recipes.

    I personally always save the egg whites for later. either do a different meal or what I do most for convenience... after finishing the minced meat/ground beef I use a little bit of the grease fat and crack 2-4 extra WHOLE eggs, mix it with the extra egg whites and make some scrambled eggs as an extra for the minced meat on the side.
    win-win FOR ME. =)

    🎉I enjoy different recipes and different carnivore experience stories. I too get a little what i call barfy when i eat too much burger fat. Butter, ghee and tallow does me just fine. Do "you" kind

    I just scramble the eggs really well and they soak up the fat and flavors. I also hit my ground beef with salt pepper and taco seasonings.

    $4.99/lb! Wow! Cheapest I can buy GB in my area is $6.49 and that's on a big sale. Usually it is $8.99. Haven't bought a steak in months. It's around $22/lb and the steaks are all now 10 OZ or less. Anyhoo, going to try your method as I have similar issues with the beef fat. Thanks for sharing your tips. :)

    Is there a reason why you just salt your meat and not use any other seasonings? Do you eat any hard cheeses? Do you eat any other meat like chicken thighs or is carnivore just beef only? Sorry for all the questions just getting a little mixed up with ppl doing dirty keto/carnivore or others having coffee with heavy cream and chicken.

      Standard carnivore diet is just meat with salt, no seasonings. Some people use seasonings though. Do some experimenting and figure out what works for you.

    Hi! 2 year carnivore here. You mentioned at the beginning that ground beef had organs in it. Do you have yours specially ground?

      Usually no, but unless it says ground sirloin it often contains kidney and heart. Kind of like sausage.

    I was horrified to see you throw out the fat. That's my favorite part! I let the pan cool in the sink until the fat starts to harden so that I can fold it back into the beef, which gives it a white coating. This only takes a few minutes if you run cold water into the sink around the pan.

      I always think about that, but for some strange reason the cooked fat doesn’t agree with my stomach. It’s funny, because if I buy tallow I do just fine with that.

      I usually cook up 2 lbs at a time and just add 2 large eggs including the white in the hot pan which helps soak up all the fat. One of my favorite ground beef meals, and I'm always okay with leftovers.

    The egg white is pure protein! Why are you throwing it down the drain and then eating the beef 'nose to tail'? Makes no sense to me.

      For many of us on carnivore, our ratio of protein to fat is too high. I definitely notice that I lose weight faster when I up the fat ratio, like I'm doing with this recipe. We're all different, so my results may not be the same as yours.

      Kids are starving in Africa but you throw away food, what a waste.
      I also use egg yolks for making hamburgers but I save the whites for next day's lunch. Why would you throw away real food? Not to mention the price I pay for pasture raised eggs, Jesus.

      This is a carnivore diet recipe for people who are choosing to do the carnivore diet. Many of us are very careful about the proportion of fat to protein that we eat. I’m not going to save egg whites for anything else because that’ll knock me off of my weight loss progress - a much bigger waste than discarding them. One runs into plenty of naysayers on the carnivore diet - but those of us who are successful just keep moving forward 🙂
