Thank you Rlynn. Yes , the cooking time with the rice is about as much as I’d go for to keep the squash from turning to mush. If I wasn’t doing the pop in pot I’d only cook this for 3-5 minutes. It will be lovely with the split chickpeas but as you say, I think I’d try cooking those through first as you would with a daal. I hope it goes well - love to know the results! Ah we have similar tastes in food in see - I love a winter warmer at the moment and they are so needed with this UK ‘spring’ :)
What can I use instead of tamarind? Hubby bought me an instant pot so crisp! And I need all the help I can get. Really inspired by your IP tutorials. Really need some more demos from the UK
Ah thanks Maria. Maybe a little honey or sugar plus a little white wine vinegar or lime juice. Tamarind is a kind of sweet but with sourness fruit. I've not tried this substitution but be good to hear if ok! 😊
Hi, when I pot in pot with two stainless stell pots, one above the other it takes almost 20m for in my IP EVO PLUS to get to pressure .Have you tried such method and does it happen to you too? Amazing recipe as always.Thank you ; ))

No, sorry I don't have one of those two pot accessories but if you look in the comments on my latest video (about accessories) , @KellyS has one of those double 'tiffin' style pots and loves it.
