Hi Emily, this is just so brilliant what you are doing for us. I love how you've gone and just done the $50 shop at Aldi (which we can all copy pretty much) then your doing the meal with the actual ingredients. JUST LOVE IT XX

Hi Emily, love your work. In this recipe I grated my carrots and onions, made it easier for the kids to eat also was easier than chopping for me. Also fried the grated onions, carrots and garlic in the oil 1st to impart some flavour into the oil which help the flavor of the rice
I've done it both ways this night i just wanted dinner done. After shopping and chopping up rverything i was knackered

We always love fried rice.
Last time I made fried rice I grated the carrot as my kids complained to was too hard when I just diced it. Worked well no complaints from the kids and a touch quicker 😀
I diced mine really thin and add them in nice and early so they soften

Try cooking the rice a day or 2 before, it always turns out better when the rice is older :)
It does that was the plan but the kids and hubby wanted it that night haha
We do this all the time but I always make sure I have at least 5 different veg. I always add a leafy green, such as thinly sliced bok choy. We get our veg form the local market rather than Aldi, Aldi fruit and veg prices are ridiculous! We go for the seconds/rejects fruit and veg at the markets, perfectly fresh but maybe shaped a little winky or with a minor blemish. I know you are doing a budget challe, but we use a few more seasonings as well. We can afford it because our fruit and veg are so cheap and it makes up over 60% of our meal. It's easy to stretch meals with carbs but it always leaves me feeling sick.
I understand that, but this is meant to give someone an idea on how to get through a rough time and just get something substantial in bellies. That's why we decided to do 1 shop only. (My fruit and veg shop is soon much cheaper). I figured if your down to $50 to feed your family you don't have the fuel to drive around.
@@AussieDebtFreeGirl I don't have a car. I am crippled and legally blind, and I live with my autistic son and his wife. I think that the idea of "getting something in bellies" is a bad thing to promote, tbh. A lot of people living in poverty are obese because of dependence on a high carb diet. I would much prefer to see you do a challenge where you showed healthy, sustainable options. Australian channels showing budget meals are few and far between, but everything I have seen you and others do so far I could have done healthier and cheaper, and without having a car. I would really, really like to learn something new but so far I'm struggling to find a channel that will give me that. I do appreciate the amount of meat you use, though. Australian eat 2 - 3 times more meat than we actually need.
@Angela Radomi Not everyone in Australia lives in a place with access to more than one shop, usually a IGA brand store, which is never cheap. We have to go with the majority. Also, these challenges to me are targeted more at the mum who is just having a rough week or the dad that had a sudden bill appear. Everyone deserves to eat. I can't know what someone will have in a food parcel etc. I want to encourage creativity and make more with less. Inspiration for those struggling.
