Ingredients and Measurements:
To Season the chicken:
5 lb. chicken chopped and washed
2 tsp. garlic powder
2 tbsp. onion flakes
1 tsp. black pepper
1/2 tsp. salt
3 tbsp. green seasoning
To make the stew:
3 tbsp. oil
3 tbsp.-1/4 cup brown sugar
seasoned chicken (see above)
3 tbsp. ketchup
1 tbsp. tomato paste
6 cloves garlic crushed
salt to taste
1 onion sliced or chopped
2 scallions chopped
4-5 wiri wiri peppers crushed
2 tbsp. chopped culantro or green seasoning
2 tsp. all purpose seasoning (OPTIONAL)
2 cans red beans
2 carrots chopped
water to cook the stew

Hey! You've always been super responsive and helpful, so I had a question...hoping you or a viewer can reply. My mom's got dementia and doesn't remember enough to pass on our recipes so I learn from you! And there's a dish I grew up eating every Christmas/New Years time but no one seems to know it online written down. Is it...some random thing my family created, or just no one has a tutorial yet? Please assist :)) it's for a liver stuffing, you grind up the chicken liver into a paste and it gets eaten on white bread? Sometimes I wonder if this memory was a fever dream but I swear I can still recall the taste every year around this time. 🤔 thank you, if you get to read this!
