- Ajapsandali Recipe:
Ingredients for 6 people:
- 6 eggplants same size
- 6 bell peppers
- 10 tomatoes
- 1 spicy pepper
- a large bunch of cilantro
- dill
- basil
- a little parsley (optional)
- 2 medium size onions
- 4-8 cloves of garlic
- a juice of half of a lemon
- 1 tablespoon of salt
- 1 teaspoon of sugar
- 1/2 cup of olive oil (or other vegetable oil)
Instructions:
- grill eggplants, bell peppers and tomatoes on a barbecue grill or skewers over the fire for 15-20 minutes until the vegetables become soft and the skin starts to peel
- remove all the skin from all grilled vegetables
- cut the eggplants and bel peppers in cubes, but not too small. Cut the tomatoes on the plate so that the juice does not leak out
- chop the hot pepper very finely
- then chop all the greens (cilantro, dill and basil), onion and garlic
- mix everything together in one bowl
- add 1 tablespoon of salt, 1 teaspoon of sugar, 1/2 cup of olive oil, and a juice of half of a lemon
- mix everything together very well
- serve hot or cold
- enjoy!

I love eggplant but had never had this recipe. I have had a Chinese garlic in brown sauce grilled eggplant recipe and a Romanian roasted eggplant dish that is out of this world. I want to thank you. I watched your previous family picnic videos and it made me want to try and make Ajapsandali for my wife (and for me too of course). She has been a vegetarian for over 30 years and she does most of the cooking for us. This dish looked so delicious to me and it looked like something that I’d like to make, especially outdoors over the fire. I scoured the Internet and found a few recipes that looked good but they were all for cooking indoors. I took the best parts of a few of the recipes I found that looked most like your family’s and made it a few weeks ago as a surprise for my wife. She absolutely loved it and so did I! We had delicious leftovers for over a week! The dish combines some of our favorite foods especially the eggplant, peppers and tomatoes. Now thanks to this new video I have your exact family recipe to follow and very soon I will be making my second batch of Ajapsandali, this time outdoors over a fire before it gets too cold where we live in Michigan, US. Thank you for introducing me to this wonderful dish that I can now make for my wife and we can both enjoy for the rest of our lives! Spasiba!
