- Learn how to bake these chewy meringue cookies with cornflakes and chocolate swirled within. They are not only incredibly easy to make, but will impress a crowd if you share them!
Makes 24 cookies
Ingredients:
4 egg whites, room temperature
170 grams / 3/4 cup superfine sugar
1 teaspoon vanilla extract
130 grams / 4.5 ounces dark chocolate, roughly chopped
3 cups cornflakes
Directions:
Preheat the oven to 150°C/300F and line a baking tray.
Place the egg whites in a bowl and beat while slowly adding the sugar until stiff peaks form.
Add the vanilla extract, chocolate and cornflakes and carefully fold through until well combined.
Place teaspoon amounts onto the baking tray and bake for 20 minutes or until slightly golden and crisp.
Remove and allow to cool on the baking tray for 5 minutes. Set aside to cool completely.
Serve, trying to eat only one.

The bttom of my cookies doesn't seem to want to cook 😢
That is not the result we want! Do you have an oven thermometer? I'm thinking your oven might not be up to temperature. The cookies are quite soft once baked to be fair, but if the tops are going golden but the bottom isn't baking then it might be the temperature of your oven.
