I also prefer regular swiss over Baby Swiss (even though I grew up about 10 minutes from where it was invented). If you're ever in the Cleveland area try Slyman's. My father in-law has a food truck with different kinds of burgers, fries, sandwiches, and most importantly, a rueben. The rueben outsells everything. Yours looked amazing, by the way. It is truly amazing how great homemade brined brisket is vs. the garbage you purchase at the store. I've done the corned beef many times and it always blows me away at how fresh the corned beef tastes. But I've never smoked it, so I'm going to check out your method on pellets and pits to see how you did it. Thanks guys! Looks crazy delicious!!

I won a really nice slicer once and have really only used it a couple times for bacon or something like that. It takes far longer to clean than it takes to use. That pastrami looks great. I'm a pretty big fan or Reubens.
That is 100 correct...just used it today and yesterday and I just told Amy...labor of love...love you use it and hate to clean it...Same thing in the Navy...took for ever...
Now that's a magnificent looking sandwich. I normally just make pastrami on rye with mustard and Swiss, but I'll go for a Rueben occasionally. That Rueben looked like perfection. You definitely nailed the secret of a good pastrami or Rueben; the pastrami has to be heated to soften that fat before it goes on the sandwich. I've done them where I steamed the pastrami and also heated it in a pan. Also using that fatty pastrami helps make it juicier and taste better. That's the way to do pastrami.

I may get hate mail but I have never been able to eat a Reuben because I don't like sour Krout or Rye bread. I will make this with good-quality sourdough, mayo, and tomatoes. Great cook Neal.
It's not everyday that you have the time to do all that work for a sandwich and put everything together. Unless you make a lot of corned beef and pastrami or use cold cuts and heat them up. I won't use all the sour kraut usually, so I get the Cleveland (whatever it's called that Walmart carries) in a little bag, it's a little too flavorful but works. Slymann's in Cleveland has a pretty famous sandwich shop. Their rubens are famous in the area but like you said you can do just as well or even better at home.
A Reuben is one of my favorite sandwiches and these looked better than any I've ever had. I don't care for thousand island dressing though, so I use horseradish sauce instead. I know you like horseradish too. Give it a try sometime. I'm betting you'll love it.

Hey, I like your channel and certainly didn’t mean to offend. I grew up near several delis in NYC and the standard Reuben had corned beef. If you prefer Pastrami then fine. I’m not a fan of the Reuben sauce/ pastrami combo and much prefer deli mustard. Keep up the good work.
Start checking your local grocery stores and walmarts tomorrow. If they are hung on a lot of corned beef they will reduce the price. I have paid as little as $1.99 lb. After st. Pats day
You should never grill pastrami; takes away all the fatty juice and leaves it rubbery instead of soft. You should put a cooling rack on your grill and squirt some water so it steams with the pastrami on top of the cooking rack then immediately put a steaming dome to lock in the steam, it usually takes 5 minutes of steaming
Although in my 45yrs of cooking I've made 1000'S of Reuben sandwiches I never wanted too. This is an Abomination to Good Corned Beef. It does sell good but I don't like it. ✌️

1000 island dressing isn’t correct for a Reuben and the bread isn’t right either, it looks like a tasty alternative though.
A genuine Reuben must contain corned beef instead of pastrami. I prefer pastrami on its own with Swiss cheese and deli mustard on seedless rye.
