- I have taught you lots of things now, I hope. But sometimes, you need to trust your knowledge and start inventing bakes yourself. This recipe is what happens when you take a few things you love making and put them together in a new way to create a whole new thing! A Salted Caramel and Chocolate Pie! (But of course, feel free to make my pie before you go off and invent your own thing!)
Recipe -
Chocolate shortcrtust pastry - • Video
Chocolate ganache -
160g dark chocolate + 160g double cream
Caramel Filling -
200g sugar
100ml water
100g double cream
1/2 tsp vanilla extract
generous pinch of salt
10g butter
Italian Meringue - • S'mores Alaska with It...

Made this for my birthday yesterday instead of a traditional cake. Boy was this decadent! Everyone was in a daze. If I were to make this next time, I'd definitely half the caramel recipe since it overpowered the rest of the flavours. I'd also half the Italian meringue because there was a lot leftover. Having a removable tart tray will really help since I didn't have one and the tart shell was a little difficult to cut through. But overall this a great recipe. You can add some nuts too. Definitely something you should keep to indulge every once in a while only.

Just made this recipe and it turned out great! I would just make more ganache to this amount of caramel, but it's my personal taste... Everything else worked out just fine and it was a success

Speaking of making stuff out from bunch of stuff that I know how to do, I just made a swiss roll filled with lemon curd with swirled raspberry goo and covered the whole thing with white chocolate ganache. And all the recipes were taken from your previous videos 😂

CupcakeJemma I couldn’t stop there 😂. Today I made your burnt butter blondie topped it with your rainbow cheesecake (Minus the colors obvs), mixed it with some of your caramelized white chocolate and when it came out of the oven I covered it with Biscoff for extra flavors 😂
Oooh. That sounds good. I just made a batch of lemon curd and have some raspberries that I plan to make into a jam. I would have never thought to cover it with white chocolate. I've got a few bars waiting to be used. Now? Now you've given me a reason to use them. Thanks!!

The word you’re looking for is diameter. The circumference is the measurement around the outside edge of the circle.

Just in time for a ladies night!!! I was racking my brain on what to bring.
Surely as a baker you would know to use your arm like a rolling pin to flip your pastry on it to transfer to the tart pan or you can fold it in half then into half again. Pick it up find the middle of the pan, place the pastry center there and unfold it. 😋 Looks soooo good, Jemma! There is one thing more I must say, adding the stars and gold Dragees made the tart look so elegant and celestial! 😍

How long will the pastry last in the fridge? I did the first part, and intended to finish the pie the next day, but something came up and been working every day since...that was about 2 weeks ago

I live in Chile and I have only found whipped cream with 35% fat content, which is lower I think than the double cream fat content... should I use more? or maybe add some butter to the ganache? thanks!

Where do you buy the cupcake cases that go transparent after baking? It was a standard, but half a year ago things changed and everybody sells white greaseproof things that stay white 😣 I have hundreds now as try different brands and shops but really need the clear ones. Cheers xx

No, the amount won't, of course. Sometimes, the temperature of the oven varies but only by a slight difference. So, don't worry unless you live in Mesosphere or Exosphere.

Oh dear I did something very wrong. My caramel turned into something hard and wouldn't mix in the cream. I didn't leave it at room temp so that is probably the problem.
Can we skip the meringue?

Tip: Trim excess pastry using roling pin
Yes, Jemma knows that and has done that in plenty of other recipes. a) She only had a tiny rolling pin. b) perhaps this pastry is prone to lots of shrinkage and it's better to bake first and trim after.
