Red Thai curry paste and Indian curry powder in roughly equal amounts in volume. Add enough cinnamon (about 1/10th in volume but hard to say with it varying hugely in flavor) to make it taste like massaman. You said easy and that is EASY! :)
In the recipe I use, I was directed to pop in quite a few cloves. As part of the dry fry spice mix. I don’t think you added any - what’s your view on this? I made it yesterday with cloves, and we think it’s too ‘clovey’ 😂

Chris Wesman I’ve heard that ginger does work pretty well in place of galangal. And lemon zest can sub in for the lemongrass (zest of 1 lemon for every 2 stalks of lemongrass), maybe with a bit of arugula to get the correct herbal notes? I’m about as far from an authority as you can get tho, so hopefully someone can step in to correct me if I’m wrong 😅 I did loads of research because I wanted to learn to make massaman during quarantine, but finding all the ingredients proved too difficult in the current circumstances. So I ended up just buying some massaman paste online haha. I believe it’s readily available Amazon, if you don’t have luck finding everything you need at the grocery store. Hopefully you get to make your own paste tho; good luck!

You guys should do online workshops where a group of people on zoom chat all cook in each of their homes and the instructor walks you through it and gives each person feedback as they are cooking
Be easier to buy ready made masaman curry paste at this time of pandemic when u are unable to get those ingredients.I recommend u buy Ayam brand paste they r superb jus add meat or chicken or whatever u fancy.But u got to hav coconut milk to cook curry.I use this brand paste for stir frying vegies as well.Believe me u wil like it and find its the easiest way to make thai curry esp when u are not experience with cooking them.

Maybe over the border in Plymouth, a good hour and a half (with good traffic) drive! I guess I'll go online and take pot luck. Which bay leaves do you use? Indian? California? Mediterranean? I just recently learned that Indian bay leaves existed. They are probably the ones used.
I was able to find canned massaman curry paste online pretty easily! Probably not nearly as amazing as making the paste fresh, but it’s a good option if you want to satisfy that craving. It at least offers the advantage of making massaman an easy weeknight meal, fwiw 😄

My favourite curry, i personally prefer to use boneless chicken thighs because i dont like to tear my chicken off the bone when im about to eat
