You can make a very simple potato sabzi at home. Boil and peel potatoes and shallow fry them in oil with a little turmeric and cayenne or red chillie powder. Once the potatoes become light brown and crusty then remove them. Add some more oil to the pan. Now add black mustard seeds let them splutter then add chopped onions. Saute the onions on a low flame till they become translucent or even a little brown. Then add tomatoes and salt, turmeric, coriander powder, cumin powder and red chili powder. Stir the tomatoes till they become pulpy and then add the potatoes , saute it properly and cover and cook for a few minutes on a low heat. Uncover and then add a handful chopped fresh cilantro. The curry is ready. You can eat this with roti or rice.
