You need a garlic peeler. It’s a little flexible rubbery tube that you put several cloves in at once and roll it on the counter. The peels pop right off.
I soak mine in very hot water and they peel so much easier..
It is nice to know you grew all this garlic.
Great way to preserve garlic and so pretty with the addition of the pepper.
I lost my garlic harvest last year and ohhhh do I ever miss it. I've managed to get seeds going but I'm still 2 years away from getting anything substantial from it. There is however a garlic festival held every year which I might just make my way to and get some bulbs to plant and, now that I saw your video, get bulbs to can.

I like to pulse mine in the food processor and then dehydrate to have dry minced garlic - so handy.
I did this too, and mixed it with ginger & green green onions I had dehydrated, and mixed it with Korean chili flakes, szechwan pepper corns, and several other ingredients to make a chili oil mix. As I peeled and minced all the garlic I swore I’d never do it again, but once I tasted it, SO worth it! Can’t wait to make this pickled garlic and use it in all the ways she suggested.

Steamed cauliflower with salt and butter. Shredded beef over large noodles with gravy. Coconut drink.

I have the soft cover version of that book and I don't know if it's different than yours I purchased it about 2 months ago on Amazon but 3:13 on my book is pickled okra unless I missed it my book doesn't even have spicy pickled garlic I'm excited to try your recipe was just looking for the printed version in front of me while I did it can't seem to find it Thank you

The paperback has missing recipes that the hardcover has if purchasing from amazon. Pretty annoying but now I have both versions since recipes are missing in the paperback version.
