Nice job and presentation. I'm doing St. Louis spares, Memphis-style Rendezvous dry baby-backs, and a huge Boston Butt for the 4th this year. We'll be on top of a mountain at a friend's palatial spread, watching all the fireworks displays in the towns down below....minus the noise. I've been doing this for around 50 years now, and think I've got things down to science. The rest is very important. If you get in a hurry and just tear into the butt w/o a significant rest in a cooler, you are guaranteed to have dry pulled pork. I mop my wet ribs with some diluted Wickers and glaze at the end with homemade BBQ sauce mixed with some Maggi flavor enhancer, which adds a slightly spicy pop. Mustard slaw tops off the sandwiches.
AB, I tried pulled pork for the first time yesterday. My pork butt was slightly over 5lbs. I smoked it on my propane smoke hollow smoker @ 250 degrees. It stalled on me alittle pass 3 hrs @ 150 internal. So i double wrapped it and bumped up the smoker temp to 275. No problem after that. I pulled it at 201 internal temp. I left it rest for 90 mins. It was still hot to the touch. The bone pulled right out. Thanks, Oh Im local i saw you in Fred's video with Rick James. LOL
Hey AB, my Pops side of the family is from NC so I grew up on Carolina style chopped pork with the vinegar based sauce. Are you a fan of that style? Basic sauce: ACV, brown sugar, black pepper then season to your own taste.
I'm probably biased because my dad's family is from Eastern NC too and that's where I grew up, but I truly believe the vinegar based sauce is the best 🔥🔥🔥
@@ms_karen My family is from Wallace NC if you are familiar with that area. Not far from Wilmington. I grew up on vinegar based sauce and love it to this day. I always have it when I smoke a shoulder. Most people like it and ask where did I come up with that idea, lol. If they only knew.......

I like wrapping my butts in a half pan. It cooks in its own juices, stays moist and never dries out. And to add a pop of flavor. Add cilantro to the coleslaw. Next Level.
Only if u do a poor job cooking! Honestly it’s a waste of money to buy with bone in as ur paying for weight u won’t use or eat. Where chicken is a quicker cook where bone in does help more as it allows it to b more forgiven from over cooking. Additionally the bones can be used for stocks where that’s not the case for long cooks as u cooked out any real benefit those bones had after.
@@SmokinandGrillinwithAB Disagree!! Bone in only helps in quick cooks as it helps in poor cookery (over cooked). A long cook like this is only a waste of money as the bone has no after use and u buy meat by weight. Smoke a boneless pork shoulder for 2-3 hours at low temp then sous vide for 24 hours at around 170 and ull have the juiciest pork with no waste.
Damn dude, that's the way to cook it right there. We are trying to figure out a way to cook our pork roast that we have out on the grill. You just showed us something.
FAM, try marinating it in sweet red wine, I like sangria, then cook in the crock pot for 8 to 10 hours on low. It will be so delicious and juicy, it just falls apart and melts in your mouth!
