- Japanese Cheesecake is by far one of my favorite cheesecakes I’ve ever done. This chocolate Japanese Cheesecake is totally irresistible, light, fluffy and chocolaty, with a moist texture resembling a souffle. What makes this Chocolate Japanese Cheesecake so delightful is the fact that egg whites are whipped and incorporated into the cheesecake mixture making this cheesecake rise in the oven like a souffle, resulting in this cloudy, fluffy texture.

Ingredients
Makes about 8-10 servings
6 eggs, separated
9 oz (250g) cream cheese, room temperature
3 1/2 tbsp (50g) butter, room temperature
3.5 fl oz (100ml) milk
1 tsp (5g) vanilla extract
¼ cup (30g) flour
¼ cup (30g) unsweetened cocoa powder
2 1/2 tbsp (20g) cornstarch
1/2 tsp (2g) salt
¾ cup (150g) sugar

Love the idea. I tried your previous Japanese Cheesecake recipe twice but unfortunately both times it had a very noticeable density gradient. Much firmer at the base and very soft at the top.

You can adjust the recipe for 5 eggs instead of 6 if you want to use an 18 cm pan

Mine unfortunately cracked. I haven’t tried it yet because I just made it. I don’t know why it did because I did everything as you showed.
Probably the oven was a bit too hot... next time position your cake on a lower rack and adjust slightly your oven temperature if needed .. some ovens may not be as accurate and may heat stronger.

Just wanted to pass on... Reynold's make "crock pot liners", which happen to be reusable, and fit perfectly around springform pans. No more leaks ever! I purchased a box with four liners and have only used two in two years.

I cooked it this morning and it didn't come out even though I followed all the steps.. The baking process went wrong, water entered into the cake and ruined it 😒
