    I can't wait to try this!! Thank you for sharing, Gemma :) where I live mascarpone is an expensive imported product but cream isn't that pricey so this is excellent... I'm kind of surprised there's no salt at all in this recipe though, as the store-bought versions have a sodium content - I guess just something they've added as a preservative?

    I’ve tried this and really the result was excellent! I just cooked my cream after adding the lemon juice a little more so my ricotta was a little bit more firm than it is supposed to be, so take care while cooking it.I used Amul’s low fat cream which is available in India.

    So simple and easy! Thank you for sharing! I use it for tiramisu, top it on sourdough bread, or even have it with scrambled eggs. It goes with anything and it's so good. Lemon juice elevates the taste

    Salam, this is very nice channel and you have lot great yummy things. I tried your Mascarpone Cheese recipe and done it perfectly. Here I would like to add one thing which I learnt yesterday; the Why of Mascarpone cheese is very useful. I put the Why in the pan and cooked it on slow medium heat around 10 to 20 minutes and after that I got a very taste Desi Ghee. Thank you.

    Hallo Gemma, I'm italian and so I know mascarpone very well. So I can tell you that, while cream cheese (like Philadelphia, for istance) often has a strong, sour taste, mascarpone is pretty sweet and it's highly fat. In fact, I don't like desserts made up of cream cheese (and I always ask for a substitute in my cheesecakes!): I prefer mascarpone because of its natural sweetness and smoothness. Ciao.

    I followed someone else’s recipe earlier in the week.
    500ml cream with 11g of freshly squeezed lemon juice.
    I didn’t even simmer until it stuck to the spoon, didn’t even put it away the first night just left it in the pan and when I decided to put it in a sieve overnight in the fridge I used a piece of kitchen roll instead of a tea towel or cheesecloth.
    End result, super thick but workable marscapone...I crushed a few (6 or 7) McVities HobNob biscuits up with a rolling pin, melted two to three tablespoons of butter and mixed it together for the easy base of a basic cheesecake.
