  • Low Carb Chicken Divan - Join us for a low carb recipe remake! In this video, we tackle one of the most popular chicken casserole recipes of all time: Chicken Divan. This delicious keto recipe for Chicken Divan casserole is sure to be hit. Whether a weeknight dinner, or a family gathering, everyone loves this easy keto recipe. The key to this casserole is a clever substitute for cream of mushroom soup. So, grab a drink, grab a snack, and settle in for another episode of Highfalutin' Low Carb.

    LOW CARB CHICKEN DIVAN CASSEROLE
    Highfalutin’ Low Carb
    1 Tbsp bacon fat
    1.5 lb boneless skinless chicken thighs
    1 lb fresh broccoli florets, separated (or 20 oz. frozen broccoli florets)
    Sauce:
    2 Tbsp butter
    1/3 c. white onion
    8 oz. white button mushrooms
    1/2 c. white wine
    3/4 c. heavy cream
    3/4 c. chicken broth
    2 oz. cream cheese
    salt & pepper to taste
    1/2 c. shredded cheddar
    1/3 c. mayo
    1 Tbsp lemon juice
    Topping:
    1/2 c. grated parmesan
    3/4 c. crushed pork rinds
    1. In a food processor, pulse the onions and mushrooms until finely chopped. Set aside.
    2. Brown chicken thighs in bacon fat until cooked throughly, set aside. Roughly chop when cool.
    3. While chicken is browning, steam the broccoli in the microwave until cooked through and drain well. (You can also use a frozen steam-in-bag of broccoli.)
    4. Add the butter to the remaining fat in the pan, and saute the onion and mushroom mixture over medium heat until cooked thoroughly, about 8-10 minutes.
    5. Add the white wine, heavy cream, chicken broth and cream cheese to the pan and reduce over medium-low heat for 5-7 minutes. Remove from pan and allow to briefly cool.
    6. Spray a 9x13 casserole dish with cooking spray. Arrange broccoli in the dish, add the roughly chopped chicken on top.
    7. In a medium bowl, add the cooled sauce mixture, shredded cheddar, mayonnaise and lemon juice. Mix well. Pour over chicken and broccoli. Smooth with spatula.
    8. Cook at 350 degrees for 25-30 minutes. Remove from oven and top with the shredded parmesan and pork rinds. Return to oven and brown the top for 5-8 minutes.
    Makes 6 Servings.

    Back in the 70s my mom found a new recipe she was excited to make us for lunch after church...it was called Chicken Divan. As we ate she asked my dad how he liked it. He said, "Now what's in it again?" As she started naming everything she suddenly stopped and said, "Oh my God, I forgot the chicken".
    We still call it Chickenless Divan to this day.😁

      Usually I would agree with this, but Xfinity has dropped The Food Network from their basic cable and I refuse to pay more for cable. If Wes left RUclips, I would be so bummed.

    Everyone needs duxelles in the freezer. It’s the secret to savory in everything. I buy the 24 ounce box of mushrooms at Costco and use one onion with. Cook that in butter, let it cool and add to a freezer bag. Flatten and freeze and you can break off what you need when you want it.

      ladyflimflam....I'm not much of a cook, but am learning....what is a duxelle? Is that the same as cream of mushroom soup? If not, what is it used for? I LOVE anything mushroom flavored, so am interested in this idea....thank you so much!

      Gayle S. It’s a kitchen basic from French cooking that I learned to make from Joy of Cooking cookbook. I use it in omelets or to build a sauce or if I have a stew or stir fry that doesn’t have enough depth. Before low-carb I would heat it with cream and serve over toast for the best bread and gravy you over had. I’ve never made beef wellington because, honestly, why would anyone bother, but it’s the paste that’s between the pastry and the beef in that dish.     OH MY GOSH! I just made this. Honestly, this is one of the best dishes I've ever ever made in my entire life, with or without keto. I'm a great cook. 69 years old. Very experienced. Have to, WOW !!! Freekin fantastic!! I followed the recipe exactly. The wine does give it a teeeeny zing. And the cream cheese is just the right amount to thicken the sauce and to give it a slight addition to the flavor. The mushroom sauce is ABSOLUTELY INCREDIBLE and is a total game changer for Keto Casseroles. I made enough to vacuum seal frozen servings for 5 days, plus eat it for 3 meals not frozen. THANK YOU SO MUCH !!!

    I love pork rinds. I spread cream cheese on them, dip them in salsa, sour cream lowcarb dip and like you did. Also I use in meatloaf to as a filler.

    I'm a house husband..though I do work from home, but that's irrelevant! I do all the cooking, and one of the things that I do cook a lot of is casseroles..I mean, for a family of 4, it just makes sense, right?       Made it last night, I really liked it, family liked it too! The pork rinds added a certain something to it, in a good way, but the ones I had I think made it saltier than it would have otherwise been? We haven't been eating low carb for about a week or two, so we aren't as in need of salt as we would be when we are full keto and I think that's why it seemed super salty...great recipe though! Very tasty, and it reminded me a lot of that chicken broccoli pasta bake, which I used to eat at least one a week, just to myself! Nothing but thumbs up here!

      @robo: Same here; I'm also a house husband, retired, am now a stay at home dad and have always done all the cooking. I made this for dinner a few hours ago, and it was really good. Unfortunately I'm the only one in my family who eats keto, and it's hard to find keto recipes that my wife will like. This was a hit with both of us. Of course our nine year old son won't any human food, but there you have it.

    I enjoy watching your videos even tho I don't think I've ever made anything (vegetarian and I don't think you 've done any veg recipes). That said, I really didn't need to watch a video on chicken divan, but decided to watch since I hadn't see you around for awhile. I'm taking the long way around to say that you are an entertaining presenter who people will watch for you - even if they don't make your food (tho I am thinking about the keto brownies).

      Born and raised in Tennessee, we ate many of them and now living in Oklahoma, it isn't any different. I am still the same ole country gal! ♥ I swear I think I have the same little recipe book that you have that is white with the blue ring bindings. It's the one that all of the the aunts, grandmothers, mothers, sisters, uncles and the red hound dog add their very own recipes... LOL I forget which video you did but you showed it and said if the house was on fire that is what you grab and save hahaha.

    I am 62 and just tasted this amazing casserole for the first time last week. I had to have it again! But I had to respect the carbs, so I am delighted to find your recipe. I have 7 minutes of cooking time remaining....
    I will scald my mouth undoubtedly. I am not a great cook, but I’m trying recipes that seem within my grasp. This was very easy to understand and with tremendous ingredients!
    I skimped on the pork rinds to control sodium intake. No big.

    For those of us that don't (or won't) eat pork, I have found that a 3-2-1 keto coating recipe works well as a substitute for the pork rinds. Mix 3 parts parmesan cheese, 2 parts almond flour and 1 part Psyllium husk powder. Makes a nice, crunchy coating for fish or chicken in the air fryer too!

Tonight I finally got around to actually making this Low Carb Chicken Divan recipe using some leftover rotisserie chicken, making it an even more doable weeknight meal. My non-low-carb hubby asked to add this to our regular rotation! So tasty, fast, and easy!

    Back in the 70's my Aunt Violet, God rest her soul, was known in the family for her Chicken casserole.
    Layers of yumminess, the likes of which I've never known to my young palette before that (sorry mom).
    Involved sweet peas (or green beans) ....dressing/stuffing, cream of celery soup, mayo (she used miracle whip) heated and mixed with chicken and then topped with some kind of white cheese and baked until brown around the edges.
    My brother (now 51) still makes this.

    You are so right about the pork rinds - people do need to give it a try! I don't care for them as a snack either, but ground up and mixed half and half with grated (not shredded!) Parm, it really does alter the flavor and it's so wonderful as a breading for lots of things - on chicken fingers, fish, and on top of casseroles. I sometimes add a bit of garlic powder too. I made chicken fingers for my (non-keto) best friend and she just loved them! She could not figure out what in the world was that delicious coating on the chicken. She thought I was truly fibbing when I told her I made it from pork rinds!

    I have to try my Grandma Mary's Pork Chops, with your mushroom soup recipe. Thank You!!! Coat Pork Chops in Yellow Mustard, Dredge in flour & pan fry. Then add Cream of Mushroom and Cream of Celery Soup. Cover and Simmer. Now I can "KETOIFY" this Recipe. Happy Dance!

    Yet another recipe that I have to try! A former roommate used to add a little curry powder to his chicken divan. Have you ever tried that? I think the combination of the mayo, lemon, and cream cheese will really offer the sort of yummy tang this casserole is known for. So excited to have found your channel. Thanks!

    OK, I am a good cook. Ask anyone. Been doing it going on 60 years. But I had NEVER made Chicken Divan til today. OMG! My husband and I were rolling our eyes over this one, it was SO GOOD. I think that mushroom sauce would be good on a flip flop - or a steak! May try it! I used chicken breast from a Costco rotisserie chicken and added a smidge each of onion and garlic powders and a little dried thyme - otherwise I stuck to your recipe and it's gonna be a "frequent flyer" at this house from now on. THANK YOU! Love your videos!

    Wes, is this a recipe that I can prep and put in the fridge until I want to bake it? Would I have to cook the broccoli then?
    I have been eating Keto for about 2 months now and I just love you....thank you for all the work do for us!!!!

      You can very likely prep this ahead of time and cook when needed, but the broccoli will still need a bit of cooking before assembly, just let it cool before building the casserole if you plan to refrigerate it before cooking. You can also double or triple the "cream of mushroom soup" recipe, separate it and freeze it so that you can assemble this faster on a week night without having to cook down the soup concentrate. Good luck! It's tasty!

    Thanks for this recipe! I too love casseroles and miss them on my Keto journey, and the mushroom soup substitute is genius. I'm making this tonight (already assembled the casserole and am making the sauce right now) for a family gathering for my grandson's 11th birthday. They can have the cake, but I'll just enjoy the casserole. Love your videos and you are doing a Yeoman's job for the Keto community!

    I can't even say how good this looks to me! Jersey girl here, but I did grow up going to a southern Baptist Church ( until I was about 19 anyhow) so I am very very familiar with so many if your recipes, so thanks for the keto upgrades.     Made this last night for dinner... And it is wonderful... I recommend everyone try it. I made it with chicken breast, next time I'll use thighs. boneless skinless on both of course.
